Daddy's birthday, and a shocking surprise.
Ok today was my Daddy's birthday and I sent him a happy birthday text that simply read Happy birthday daddy. I sent the text about 11am and this evening around 4pm I recieved a reply....that about stopped my heart! I was shocked, surprised, and confused to say the least.....because my daddy passed away on April 1st this year of a sudden heart attack.
It simply said from Dad which is how I still have his number listed in my contacts. If course I teared up and had to excuse myself(we were talking to a friend at the time). I went inside and read the message...this is what it said.
From Dad:
2 Corinthians 1:3
Blessed be GOD, even the FATHER of our LORD JESUS CHRIST, the FATHER of mercies, and the GOD of all COMFORT, who comforteth us in all our tribulation, that we may be able to comfort them which are in trouble, by the comfort wherewith we ourselves are comforted. Have a BLESSED day.
Like I said, I was shocked and surprised. How did daddy send me a text, who could have sent it to me? It always says on the incoming text who it came from and the number like my dh's name or ds's name. And this one simply said dad, no other name or number, so it came from dad's number.
I thought for sure daddy or GOD had sent the message to me.......and I guess they did.
I called my oldest brother and told him about it. He told me that my youngest brother had called the number one day when he was haveing a hard day. And found out that a new lady now had that number. He said the lady had been saved and was a christian and that my brother had talked to her like an hour. She had told him he could keep the number and call her if he ever needed to. This I did not know about.
So I called that brother and told him, he said he had called dad's number one day and it just rang, he left a message for daddy and didn't think anything else about it. About a week later the lady called him back.
We are guessing that she sent me the text back for comfort. I texted her back and told her thank you, that I didn't know that someone had the number and that it was nice of her and a comfort, and a shocking surprise of course. She hasn't texted back yet.
I still think Daddy sent me a message to let me know he got the birthday wish I sent. And it makes me feel good.
The LORD works in mysterioius ways!

Apple Pie Filling
Apple Pie Filling
18 cups baking apples, peeled & sliced (about 6 lbs.)
1/4 cup lemon juice
4 cups brown sugar
1 cup cornstarch
2 tsp. ground cinnamon
1 tsp. salt
¼ tsp. ground nutmeg
8 cups water
In a large bowl mix the apples together with the lemon juice to keep
them from browning. Set aside. In a large pot combine brown sugar,
cornstarch, cinnamon, salt and nutmeg. Add water and bring to a boil
over medium heat, stirring constantly. Boil for two minutes. Add
apples (you may want to drain off some of the lemon juice, but I
think it adds a nice flavor) and return to a boil. Reduce heat,
cover and simmer until apples are tender, about 6-8 minutes. Have
your quart jars and lids hot and ready. Pack each jar with the
filling to ½ inch from the top. Screw down lids. Process in hot
water bath for 20 minutes. Makes about 5 quarts.
Our Apples are allllllllmost ready and I hope to make pie filling and applesauces, along with apple CHIPS in the dehydrator too!

Blackberry Crisp
1/2 cup butter, softened
1 cup brown sugar
1/2 cup oatmeal
1/2 cup flour
1 tsp. cinnamon and/or nutmeg
5-6 cups of Blackberries
1/4 cup Cornstarch
Start out with clean freshly picked Blackberries in a bowl, I sprinkle about a 1/4 C of cornstarch over the top and mix in, let it set. Grab another bowl and toss in all your other ingredients, using the tines of a fork, mix until crumbly. Pour your berries in a baking dish, oversized pie plate, etc., and sprinkle on your crumbly topping mixture, put into a pre-heated 350 degree oven, bake for 25 or so minutes and remove, cool and EAT. Mmmm!

German Apple Pancakes- GLUTEN FREE!
German Apple Pancakes
Makes 10 Large Pancakes
6 eggs
¼ cup sugar
1½ cups rice flour
1/3 cup tapioca starch/flour
2 teaspoons baking powder
½ teaspoon salt
2 cups milk, soy milk, rice milk or apple juice
2 tablespoons unsalted butter, melted, or vegetable oil
2 McIntosh, Cortland or other cooking apples, peeled and very thinly sliced
½ cup raisins, optional
Butter, oil or vegetable spray
2 tablespoons confectioner’s sugar, for garnish
- Beat eggs with sugar until foamy.
- Add rice flour, tapioca starch/flour, baking powder and salt. Beat until smooth.
- Add milk and butter (or oil).
- Fold in apple slices and raisins, if desired.
- In medium skillet, heat butter or oil or coat with vegetable spray. Ladle ¼ cup batter into pan and cook until top is set, about 3 to 5 minutes. Flip with spatula and cook another 2 to 3 minutes.
- Turn pancakes onto a warm serving plate. Roll them up like crepes and keep them warm. Repeat with remaining batter until all is used. Lightly dust pancakes with powdered sugar. Serve warm.

This is Bella, my birthday gift from my DH. We had a daschund years and years ago who was sadly ran over by my DH's work truck one evening. I have wanted another one for a really long time. I find them to be really smart and loving. And protective when needed.

Help, suggestions and tips needed!
We have three LARGE fig trees here on the farm. They have produced lots and lots of figs. Of course that is not what I need the help with.LOL I need the help with the beetles that are taking over the figs. Lots and lots of beetles!!!! How do I get rid of these? And is there something I can do next year to prevent them BEFORE they come? This is my first year with fig trees and I really don't know anything about caring for them. They are old and established so I don't need help growing them, just a way to keep the beetles away, and any normal yearly care they night need.

A "throw together" supper
Ever have one of those nights when you didn't want the same ole thing and decided to see what you could whip up with what you have around? Well that is what I did tonight. I got tired of the same ole same ole and decided to see what else I could do.
On hand I had andouille sausage(a spicy sausage from LA.), red onion, cherry tomatoes, shredded lettuce, bell peppers, shredded colby jack cheese, and jalapenos. So what did I do???? I threw the sausage on the flat cast iron griddle, sliced some red onion, halved the cherry tomatoes, sliced the bell peppers, and diced some jalapenos and grilled them on the same griddle with the sausage. While that was grillling I put the shredded lettuce in a bowl, then sliced the sausages in rounds and added that on top of the lettuce, layed the grilled veggies on top of that and sprinkled with the cheese.....mmmm mmmmm good.! I made enough for dh and I and we both enjoyed it.
Of course all my "throw togethers" do NOT end up as yummy....there were some "throw aways" from time to time.....but hey, ya gotta try sometimes right? LOL
