Today we got the call! Gabe has been legally freed for us to Adopt! Oh Praise Jesus!!! I am on cloud 9!
We meet with one more person to finish the paperwork and in May or June his Adoption Date will FINALLY be here!
Thank you all for your prayers they have made this journey so amazing.

Monday, March 8, 2010 Food Storage and Square Foot Gardening
I am doing research on Food Storage and also Square Foot Gardening. Both are important in further stretching our money and providing for our family. I have been doing a lot of reading and watching youtube videos on the subject. (we don't have tv)
I ordered my first supply of dehydrated veggies, eggs, milk, vital wheat gluten for my breads, and tried them out in a pot pie over the weekend. The family really liked it, so I took the left over filling mixture and threw it into the crockpot as we left for church yesterday and made it into a soup, the liked that even more. I made a couple loaves of whole wheat sandwich bread and they ate one and half loaves already :O) I will have to make more today. It is a wonderful recipe, it is squishy like wonder bread but has all of the nutrition from the whole wheat. I am going to start milling my own wheat soon, just waiting on my wheat grinder, I bought a hand cranked one (first) I will buy an electric one, when a check from the web business comes in. But if the power went out I would need the hand operated one, and my solar stove to make bread :o)
I also came across a website on dehydrating your own food. Wealth of information it is called dehydrate2store.com
I then ready about square foot gardening, ladies and gents this is the way to go! NO weeding, No tilling, all natural and you can do it in a small space!!!!

Here is the recipe for the bread
EZ White Bread
1 1/8 cups warm water
1 3/4 – 2 tsp active dry yeast
2 Tblsp sugar (you can use a little more sugar if you like your dough a little sweeter)
3 cups flour
( I use whole wheat white flour Mixed with AP flour 50/50)
1 Tblsp vital wheat gluten (remember you don’t need as much gluten if you’re not using whole wheat flour)
1 tsp salt
2 Tblsp nonfat dry milk
1 1/2 Tblsp butter/margarine or oil
1/4 cup potato flakes
2 tsp. white vinegar
(you don’t really need vinegar for white bread, remember the dough enhancers are primarily needed for whole wheat bread)
Add the ingredients in the order listed into a mixer bowl (like a kitchen-aid) with a dough hook attachment and mix on low for 10-12 minutes. Or mix it on the dough cycle in your bread machine.
After all the mixing is complete, if the dough still seems too gooey and you are unable to handle it, add 1 Tblsp flour at a time, and mix after each addition until the dough is manageable with your hands.
Let rise 45 mins -1 hour, punch down and use to make bread, cinnamon rolls, cookie sheet pizza, rolls, or anything else you can think of! Let rise after you have made your creation and bake according to the direction of the recipe you are making.
If you are making it into bread, form into a loaf at this time, place in a loaf pan, let rise in a warm place 45 min -1 hour and bake 375 degrees for 20-25 minutes until golden brown and sounds hollow when lightly tapped.
If you are making this recipe in a bread machine. Follow your bread machine’s directions and add the ingredients in the order listed in their recommendations. (only one loaf will fit in a bread maker) |

Taco Chili ~ CHEAP AND YUMMY
1 pound cooked Hamburger or Ground Turkey
2 cans Pinto Beans
1 can Black Beans
1 can Kidney Beans
1 can corn ~ drained, I use hominey :O)
1 can Rotel (Tomatoes with chili's)
1 pkg dry Ranch Dressing
1 pkg Taco seasoning
Mix all together in a crockpot. Cook on low 3-5 hours , High for 2-3 hours. Serve with Tortilla Chips, Cheese and sour cream.
This meal is very inexpensive, my friend omits the meat and makes it vegetarian. This freezes extremely well.

Monday, February 22, 2010 Update regarding Gabe!
So I got a call today telling me they set the adoption court date! I said WHAT?!!!!! Is the appeal over? They said OH UMMM NO, I guess I should call upstairs and let them know that they can't set the date until he is legally free.
Silence.................... I finally said, could you please tell me what is going on regarding the appeal? I was told the following:
We expect Gabe to be legally freed in March, then you will get a visit from the subsidy department, then the paperwork goes to the head honcho. That most likely would be April, He holds it for a month, so he is not pressured, and then you can adopt Gabe. So looks like May or June.
I said, wow May would be awesome, my daughters graduation from High school is on May 19th, my entire family will be in town. My case workers says, Wow May would be great, I will pray for that!
What a day :o)
I am SO looking forward to the day I get the REAL phone call and not the pretend one!

Yesterday I made four loaves of French Bread. One loaf I gave away, One loaf we are currently eating, That leaves two more loaves.
I decided to make those two loaves into French Bread Pizza. I hate to waste anything. The Pizzas are now safe in my freezer, waiting for a certain Teenage Son to come home and devour.

Monday, February 15, 2010 Why I am an advocate for OAMC
I teach Freezer Cooking at Church a lot. I teach Co-Op Freezer Cooking as well. The Reason?
Well, for starters I save a lot of money by freezer cooking. I regularly spend less than $300.00 per month for a family of 5 with three meals, and two snacks per day. I freezer cook also a ministry, if a baby is born, or someone is sick, I can bring them over a meal with no problem at all. The last reason I freezer cook is because I get Migraine headaches a lot. They are caused by the Barometric Pressure changes. Something I have to live with. If I am down with a Migraine, one of my Teenagers or Husband, can just pull out a meal and eat a healthy home cooked dinner.

Monday, January 11, 2010 How to clean up eggs off of the floor
Today while making my little boy some scrambled eggs, I accidently dropped an egg onto the floor. I asked my daughter to please hand me the box of Kosher salt. She looked at me like I was crazy, but handed me the salt as asked. I proceeded to open up the salt and pour it onto the egg on the floor, I covered the entire egg with salt almost 1/2 inch thick. I told her to just ignore the egg for a while. One half hour later I asked her to bring me the broom and dust pan. She looked at me again as if I was crazy but brought it to me anyway. I swept the egg and salt mixture into the dust pan. It was now a solid. NO residue on the floor.
She looks at me and says, Your grandmama was one smart lady! I looked at her and said, I learned that in Chemistry !

Sunday, January 10, 2010 High Fat HIgh Calorie diet for the baby :0)
Our little baby Gabe, is not gaining weight fast enough for the doctors, so they put him on a High Fat, High Calorie diet. I wanted to post this Muffin recipe that he likes very much because the pediasure fills him up and then he doesn't want to eat or drink anymore throughout the day.
Banana Chip Muffins
1 140z Package Pillsbury Banana quick bread muffin mix
1 8oz bottle Vanilla or Banana Cream Pediasure
1/2 Cup Vegetable Oil
2 Large Eggs
1/2 Cup Mini Chocolate Chips
Preheat oven to 400 degrees. Use paper baking liners for the muffin pan. Combine bread mix, pediasure, oil and eggs. Beat 50-75 strokes until mix is moistened. It will look lumpy. Fill muffin liners 3/4 full. Top muffins with Chocolate Chips. Bake for 15-25 minutes or until toothpick inserted in the center comes out clean. Cool pan on a rack for 5 minutes. Remove the muffins, serve warm or cooled to room temperature. Makes 12 muffins.

So of course over the Holidays my baby DS and DH got sick. The baby got croup and my DH got every ITIS there is. He is finally done with all of the antibiotics. But I must admit that my DH is a bigger baby than the children are when he is sick.

Thursday, January 7, 2010 No TV
So I am sitting at the kitchen listening to the championship game on espn.com Why you ask, because we do not have t.v. The reason we do not have t.v. is because while my teenagers watch the baby they watch t.v. And now the baby every time he would hear the t.v. turn on he would run to see what they were watching.
I do not miss t.v. , we have not needed nor wanted it, however, tonight I feel that I would like to watch the game. Oh well :0) God is good and we can hear the game on ESPN.
Not happy about the outcome, but congrats Bama anyway :0)

Wednesday, January 6, 2010 Wonderful Day
Today it is snowing, (not a surprise we live in Colorado) and of course I made soup. Something wonderful, Cheeseburger soup, with homemade Challah bread, and a poppy seed cake for dessert. It has been a wonderful day so far. The teenagers are getting ready to head out to FUEL. FUEL is for High School students, it is their bible study :0) My DH and I will be playing with the baby until DH starts his second job, he is a website designer at night in our home office. He is a LAN analyst during the day. The baby and I will then go upstairs and the baby will take his bath. I will listen to Focus on the Family, Family life Today and of course Insight for Living with Chuck Swindol and have some much needed quiet time with our LORD!!!!!
Maybe I can even sneak a bath as well!
Doesn't that sound like a wonderful day?

Happy New Year everyone! I wanted to stop in and wish you all good tidings.
Also, Have you ever made a New Years Resolution? I did 20 years ago. My last drink was December 31,1989. I turned 20 this year. New Years day is my "Birthday." it has been fun looking back on the past twenty years and I owe it all to GOD. Because of my Lord and Savior I am a new creation and I am so thankful.
I wanted to let you all know that I appreciate your prayers and your comments. I am going to be more regular on this blog because I enjoy you all so very much.

Tonight I made Tiger Butter, Peppermint Bark and Pretzel Turtles! I recommend that you make Pretzel Turtles with your children, they can unwrap the rolo's :0)

Assembly Directions:
Line a cookie sheet with foil. Spread the mini pretzels out on the foil, and top each one with a piece of Rolo candy. Bake at 250 degrees for 4 minutes. Remove the pan from the oven. Put a pecan half on top of a Rolo, and press it down, so the melted candy fills the pretzel. If the Rolo resists when you try to push it down, put the cookie sheet back in the oven for 1 more minute, so it can melt more. Top all of the Rolos with the pecan halves as directed above. Slide the piece of foil (with the candy still on it) off the warm cookie sheet onto a cool cookie sheet. Put the cool cookie sheet with the candy on it into the refrigerator for 15-20 min or until the chocolate is set. Remove the cookie sheet from the refrigerator.
Freezing Directions:
Put the candy in a rigid container, separating the layers with waxed paper. You can use freezer bags, but be warned that the pretzels will get broken as the bag is jostled around in your freezer. Seal, label and freeze.
Serving Directions:
Remove the desired number of candy pieces from the freezer and allow to come to room temperature. You can serve them chilled, but the caramel is easier to eat at room temperature.

What a simple idea to make some great Christmas candy! The hardest part of making this recipe is unwrapping the foil from the whole bag of Rolo’s! I love the combination of sweet chocolate and salty pretzels. I saw this idea a couple of years ago in a ladies magazine (I haven’t a clue which one!) and just now got around to trying it. Definitely a keeper recipe at my house!!

Saturday, November 21, 2009 Pie Sale
Tomorrow at Church we are having a pie sale to help pay for the Junior High and High School students pay for transportation to their winter retreats. After baking two pies I cried because my oven is horrible and the edges burnt! Even with the tin foil. After crying over the money wasted, my sweet husband took me to the store and bought YES bought four pies for the sale...... When we got home I made a pumpkin pie and put it into the oven and it came out perfect :0) and then I made a Pecan Pie and it too came out perfect. I then scrapped off the burnt crust of the Strawberry pie and the Apple Pie. My sweet husband looked at them and said "Honey they look delicious!" I smiled and realized I had 8 pies I could sell at the pie sale tomorrow. I was ready to through out the fruit pies.......
God is so amazing to love the inpatient person I am and calmly sit by and wait for me to catch up to him.
I hope you all have a great Thanksgiving, I am going to freeze the home-made pies for Thursday!

Friday, November 6, 2009 Last week at this time...
Last week at this time, we were fighting a huge snow storm trying to drive to get to Grandpa's funeral. Today no lie it is going to be 80 degrees. Wow! I love Colorado :0) My house is decorated for Fall and the leaves that were left behind from the snow storm are so beautiful.
Gabe is in his highchair eating apples and peanut butter. My little man how has 6 teeth! Wow this year has flown by fast if they find his bio-mom and baby we will try to adopt that child as well.
