Note I haven't tried these recipes yet but will soon..I might do these this weekend.. From our kitchen to yours ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ Zucchini-Bran Squares ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ 3/4 cup (1 1/2sticks)butter,melted and cooled 3/4 cup egg substitute 1/3 cup skim milk 3/4 cup bran cereal 1/2 cup raisins 1 3/4 cups unbleached all purpose flour 1 cup sugar 2 teaspoons baking powder 1 1/2 teaspoons ground cinnamon 1 teaspoon baking soda 1 1/2 cups grated zucchini ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ 1~preheat the oven to 350F.Grease an 8 inch square baking dish or coat with nonstick cooking spray 2~combine the butter,egg substitute,milk,cereal,and raisins in a large mixing bowl.Set aside for 5 minutes. 3~In a small mixing bowl,combine the flour,sugar,baking powder,cinnamon,and baking soda. Mix well. 4~Squeeze the zucchini to remove any excess moisture.Stir the zucchini into the cereal mixture and stir to combine. Spread the batter in the prepared baking dish. 5~Bake the squares for 55-60 minutes,until a tester inserted in the center comes out clean. 6~On a wire rack,cool the squares in the pan. Serve warm or completely cool. Oh my, the long hot days of summer are here! It has been so dry and dusty here in the foothills. We are blessed to have our own water supply here on the farm. We have a well for our domestic use and a cistern and pond for all of our farm needs. I cannot imagine our water bill if we were not self-sufficient in this way. We do try to use our water efficiently and keep waste to a minimum. I keep a kitchen timer wherever I am so that I don't forget to move a hose or change from one zone to the next! As you can see, Miss Caul E. Flower keeps a close eye on our garden for us. She is extremely hard-working and doesn't charge a penny......
Speaking of Dearest building things........here is the latest from the "wood shop"......
We are just beginning to gather a few vegetables. At almost 6000' in elevation, we are a few weeks behind the city. It will be much later for our cucumbers! It seems that some pesky varmit was munching on them as fast as they came up. I put a wall o' water around each one and now have quite a few healthy looking plants. Aaahhh.... pickles and relish! I certainly will be busy this fall with all the canning that I hope to do. I hope you are all enjoying the "fruits of your labors" this summer. Oh dear, time to move the hose! 02:39 - Friday, July 25, 2008 - comments {0} - post commentMex Mex Movie Night-We love Fridays around here!! Actually, Thursday is our Friday. My hubby works 4 ten hour days, so Thursday is his Friday. Anyway, now its really Friday- just another excuse to get cozy with the family and have a carpet picnic, which has always been one of our favorite family events. Actually, I think we have been doing this for about 16 years- ever since our daughter was a baby. Only then, it was just Mike and I- and it was our "date" after putting the little (screaming) princess to bed! We get blankets, a good clean movie, and some good food- usually something special, and have it all out in the living room like a big picnic. Tonight, we will either watch "Eight Below" or another "clean" moving I found on ChristianBook.com that lots of people raved about. I actually order it from netflix though, I hate to buy a movie, not really knowing if it is a keeper or not. Anyway- my sissy is down. Its bad enough when a single mom is just making ends meet- then- some nit wit mis uses her debit card number and sifts money out of her account- just when the mortgage is due! Seems so amazing to me- that a company or a bank can get immediate funds from us- but when they have to return it- IT TAKES FOREVER!!! Things are so BACKWARDS! Hopefully- a nice carpet picnic and some mexican food will cheer her up! I know God is watching out for her, and I know this will all come right in the end. In the mean time- we are just trying to cast this big fat care on Him- because we know HE cares about it- and will take care of it! HAPPY FRIDAY ALL!! What your seeing is a Lasagne Garden made with Newspapers over grass, then petemoss, directly topped with manuere and soil, THEN repeated again with petemoss, manure and soil until I got the desired height. Sweet 100's are producing 100's of little tomatoes now while our peppers are coming along nicely. Cuces are growing up the vine like mad ...but the ONE issue we're having. See the bald spot in the center of the garden?...that's SUPPOSED to be all my different kinds of lettuce. WELL, Edward, the cute but pesky woodchuck (groundhog) has eaten them to stubs. I have NO LETTUCE. SO, I'm trying to figure out how to deal with this critter. He's SMART. We put a plastic bag over them one night and Edward (the woodchuck) pulled it off. I can't believe I've named him, I'm not close to him now that he's wripped my dream of making a FULL SALAD directly from my garden. Now I have to depend on the local farmers market, which isn't so bad because we're supporting them, but I wanted the good feeling of having grown my own lettuce. So I'm trying to figure out what to do for next years gardening season. Nip this situation in the bud.
