Requested Prayers and a Recipe

Friends, I have decided to post tonight for fear I wouldn't get around to posting in the morning for all the running around we need to do bright and early.
First off, thanks so much for the well wishes for my children, they seem to be feeling better and they only got sick the one time this morning... who knows??
Second, I need you to pray for my Aunt Lynda.  She is my Mother's sister and just a couple of years younger than my Mom (who is only 49).  She had a place come up around her eye and didn't know what it was.  Well she put it off because she doesn't have insurance.  And she still doesn't.  On Tuesday she went to Vanderbilt to have it biopsied and it was cancerous.  She is going to have it removed tomorrow at 3:00 pm.  She does not have insurance as I previously mentioned, therefore they are only going to deaden the area instead of putting her to sleep for the procedure BECAUSE SHE IS WITHOUT INSURANCE!!!  Can you tell that infuriates me?
They feel the cancer is around much of her eye and I can not imagine having them cut on her to remove it and then trying to reconstruct what they have cut out and her feeling all that pain.  I am hurting so much for her and worried about her dealing with so much pain.  Please remember her in your prayers!!! My husband and I prayed tonight for God to just work a miracle and them not to even have to go through with the surgery... I know God can!!!!!
And thirdly I will post a recipe for you... With fall here at our doorstep now, nothing says comfort better than  a big ole pot of beef stew.  This is how I make it... I hope you make you up a batch with some cornbread and cozy up with your family for a night at home! Enjoy!

2 lbs or more of stew meat whatever kind
1 or 2 large onions
Take some olive oil and drizzle it into a big stockpot, when it is hot, add your stew meat and onions and let it cook till  your meat is almost completely cooked through (it will finish cooking as you finish your stew)
Once it is almost completely cooked through then add a few heaping tablespoons full of flour.  Stir it around and let it seep in and soak up the meat drippings. Give this a couple of minutes to cook up, if you have more meat and more drippings you just add a little more flour, just adjust to what you have.
Now you can add some water, this will help to thicken your stew. 
For now just add maybe 3 or 4 cups, then if you need, you can add more later. 
Ok, so far you have meat and onions, what else do you like?
Do you have a bag of corn from your garden that you froze?
Toss it in.
Do you have a jar of green beans you canned?
Toss it in.
What about some tomatoes? Potatoes? Carrots?
Add them right in too!
There are some who have certain things they like in a stew and some they might not, this is totally up to you!
And the amounts of the veggies you add is totally up to you as well! There is no rhyme or reason to this recipe, it is all preference!
In mine I like ALL the things I listed. 
You also need....
Salt
Pepper
Garlic Powder
Onion Powder
And any other seasoning that you fancy...
And if you want the stew even a bit thicker take a couple of tablespoons full of cornstarch and add a little cold water to them.  Stir well and then add to your stew... It will help to thicken it up in no time!
Let this sit on your stove pretty much all day, the longer it sits the better it gets! I would say 6 hours minimum. 
And don't forget your cornbread!

I am glad your children have bounced back. I will be praying for your aunt and her medical staff. I think the treatment of the uninsured is barbaric Of course turns out we are one of those uninsured families ourselves so I understand your aunt's predicament..

I am praying for your aunt Lynda. I can't imagine her turmoil over this and that they would even recommend taking it off without putting her under. What a terrible thing to even say to her "Because you don't have insurance". I can't understand the medical community? Whatever happened to everyone getting medical treatment whether they can pay or not?? Prayers are with her.
I am also glad your children are feeling better. I love beef stew, I just made some last week, for the next 5 days it is in the 80's here for PA that is Wonderful.. I love the warm weather, hardly feels like fall here, but I think it is dropping 10 degrees by next Wednesday. They are calling for maybe hitting 90 here on Saturday.. now that's a little bizzarre for October. But it keeps from turning on the heat. :o)
