Spinach Quiche

Good Morning! 
I know how busy we can be during summer, working in the garden, canning and preserving what is coming in, just general work... So last night I played around in the kitchen and came up with a delicious treat for a simple supper.
Spinach Quiche
8 eggs
1 medium onion chopped
1 can mushrooms
1 box of frozen spinach
3 cloves of chopped garlic
1 Tbsp of parsley
1/2 cup sour cream
4 oz. cream cheese
4 Tbsp. butter
2 pie crusts

Chop all of your veggies and beat your eggs, mix together thoroughly.  Break your cream cheese and butter in bits and add, add sour cream and mix.
Pour into pie crusts and bake at 375* for 30-40 minutes.
Serve with a salad.

I'm going to make that tomorrow night, using my broccoli in place of the spinich... because that is what I have. I hope it turns out well.

Thanks for the idea. I need to plan around what I have for the next couple of weeks. So that's perfect.

I made it!

Used your recipe (loosely) tonight.

I used that broccoli instead of spinich and a whole package of cream cheese, doubled the eggs to make 3 instead of 2 and since I had it leftover in the freezer from another recipe, I added chicken sausage I'd cooked up with mushrooms stems (for stuffed mushrooms). It was the only mushrooms that I had, LOL.

It's in the oven now smelling heavenly! I came back to your blog in order to check the time and temp. I think I'll up the temp to 375* for a bit extra, I'd had it set on 350* I also used homemade pie crusts so it'll probably need the extra minutes anyway.
