Tuesday on the Homestead

Good Morning My fellow Homesteaders

Today its wet in Michigan we had a lighting thunderstorm here last night, so the wee one slept with us for most of the night. Then my hubby took him back to bed about midnight. He was hogging hubbys side of the bed.

So today i was going to try my hand at Tamales. I had my pork in the crockpot over night and most of the day yesterday. So that parts done, but I forgot to grab jalepenos, at the store, and rotel tomatoes. So this project will have to wait till thursday. I can still shred all my pork and get my broth ready for the project. I will post the recipe after I do it, so I know what to add and what not to. This will be my first time at this. So we shall see.

So instead today we are going to try and fill up our breakfast box. This year for part of my things to work on. I have decided to have a breakfast box in my frezzer. I do not know how big yet, but big enough to hold breakfast stuff but not to big. I plan on making convience breakfast stuff to freeze for those quick breakfasts. I usually make a pretty big breakfast most mornings, but I have been tring to work on convience foods. I will start out by making breakfast burritos. I have made them before. The last time I made them with homemade tortialls, but I am trying to come up with a better recipe for those yet. So I bought store ones this time, they were on sale. So they will have egg cheese and sausage or chirizo in them. Then wrap them in plastic wrap and in the breakfast box they will go. So I will have to let you know tommorow how this all turns out.

Well it is time to turn off the computer and go and switch the Laundry, and strain my Pork Roast.

I hope everyone has a blessed day on the homestead.

I don't have a specific spot in the freezer (that is a great idea) but I do prepare a lot of breakfast foods ahead. I freeze pancakes often and put them in there along with making sauage patties. I have never tried to freeze the barritos I make. Could you tell us how you make them and freeze them?
