Menu Plan 1st-7th JulyAnother vegetable box arrived on Tuesday. It contained:Potatoes, carrots, onions, mushrooms 2 courgettes, 1 cucumber, 1 lettuce, swiss chard, cauliflower 2 peaches, 1 punnet redcurrants, cherries, 3 bananas I think this may be the worst menu plan I've ever come up with, chiefly because we've invited about 20 people, plus kids, to our house for a barbecue on Saturday (and it had better stay sunny because there's no way they'll all fit in the living room), so we may or may not be left with masses leftover. Anyway.... Wednesday: Toast with beans and fried eggs Thursday: Pasta with swiss chard and cabbage Friday: Leftover corned beef hash Saturday: Burgers, sausages, chicken and vegetable kebabs, bulgar wheat salad, spicy potatoes, lentil sprout and spring onion salad, crudites and dips, cheese and onion bread, pappy burger rolls, chocolate brownie cake and raspberries. And there my menu grinds to a halt. We'll eat leftovers till they run out (except for uncooked meat, which can go in the freezer), and then I'll make macaroni cheese with cauliflower and bacon. And hopefully that will take us through to the next vegetable delivery. I suppose we also have some spinach in the garden that could be eaten, along with a lot of herbs (chiefly mint - it's taking over). Two weeks of menu planningI'm trying to drag myself out of blog-apathy at the moment, and I don't want incomplete records of the menu planning (in case I want to try and work out what I did with something last time), so this is last week and the current week's menus.Tuesday 16th July's box: Chard, courgette, 2 red peppers, lettuce, cabbage 2 apples, 2 pears, 2 bananas, 9 apricots Wednesday: Pasta with tomato sauce (courgette, pepper, onion) Thursday: Pasta with chard and cream sauce Friday: Leftovers Saturday: Sunday: Lasange with peas and cabbage Monday: Campfire salmon, chips, peas Tuesday: Bread and cheese, ham, chutney Tuesday 23rd July's box: 4 yellow beetroot, 2 courgette, cabbage, kohlrabi, cucumber 4 bananas, 2 pears, 2 peaches, 1 punnet gooseberries Wednesday: Kohlrabi and beetroot soup, bread Thursday: Out Friday: Leftovers Saturday: Out (Dedication Day for camp) Sunday: Summer squash bake (Sharing Lunch at church) Monday: Leftovers Tuesday: Corned beef, cabbage and potato hash This is the Golden Beetroot. I didn't know what it was, and had to email the supplier to ask them! Menu Plan 10th-16th June 2009Yesterday saw the arrival of yet another vegetable box.Potatoes, carrots, onions, mushrooms Spinach, bagged oriental salad, courgette, red pepper, kohlrabi 3 bananas, 2 apples, 1 oranges, a small punnet of strawberries The strawberries frustrate me - they've sent us 16 strawberries in the punnet, and it appears to be worth 5 units of fruit - which doesn't strike me as a particularly good ratio. And we've got strawberries coming out of our ears in the garden. We haven't yet tried the ones that came in the box yesterday (which are from Hereford - hardly local!), but last year's box strawberries were completely tasteless. I may request no strawberries again, like I did last year. However, on a more exciting note, the kohlrabi they've sent is purple! Anyway, here is the week's initial menu plan: Wednesday: Wraps with spinach and spicy bean mush (leftover stuffed pepper filling from Monday), served with lentil sprout salad (leftover from yesterday) and tomato-cooked potato and courgette (leftover from yesterday) Thursday: Out Friday: Leftovers from freezer - red lentil coconut curry. I'll make up some bulgar wheat to serve with it Saturday / Sunday: Away for the weekend Monday: Jacket potatoes with fried red pepper and onion topping Tuesday: Rice and vegetables with spicy peanut butter sauce Menu Plan 3rd-9th June 2009This week's vegetable box contained:Potatoes, carrots, onions, mushrooms Cabbage, 2 green peppers, courgette, cucumber, lettuce 2 bananas, 1 lemon, 3 pears, 3 apples, 3 oranges Menu plan for the week is as follows: Wednesday: Sausages, herby mashed potatoes, spinach and peas Thursday: Pasta with cabbage, onion and cheese Friday: Leftovers Saturday: Out at a BBQ Sunday: Punjabi baked fish, brown rice, salad Monday: Peppers stuffed with spiced beans and onions, boiled minted potatoes, spinach / salad Tuesday: Potato, onion and courgette baked with eggs, salad Menu Plan 27th May - 2nd JuneThe last box for May arrived yesterday. We're gradually getting through the "hungry gap" now, so things are looking more springlike.The bottle visible at the bottom of the picture is ginger beer - yesterday was my husband's birthday, and I ordered that as an extra birthday treat for him, and was very worried the order would be mixed up. Thankfully, it wasn't, and he had it with his supper yesterday evening. Apparently it was very good stuff. Potatoes, carrots, mushrooms, onions Kohlrabi, cauliflower, green pepper, lettuce, spinach 3 apples, 2 kiwi, 2 pears, 3 oranges, 3 bananas We've got lots of carrots left from before, and a few potatoes. My proposed menu plan is: Wednesday: Out at friends Thursday: Red lentil coconut curry (carrots, cauliflower, spinach) served with brown rice Friday: Kohlrabi with peas and potato, served with brown rice Saturday: Holiday Sunday: Holiday Monday: Leftovers (G is visiting a friend for supper) Tuesday: Pizza topped with pepper, onion and mushrooms I may need to modify the menu a little to accomodate more potato and less rice. We're not really getting through the potatoes fast enough at the moment. We may have fried potatoes and egg for Saturday breakfast, before we set off on our VERY LONG WALK (about 27 miles, over two days, stopping overnight at a B&B in the middle - not so very long, really). Menu Plan 20th-26th MayHere is yesterday's vegetable box. The chocolate they sent as a placatory measure because of the repeated mix-ups over flour. Shame I don't like dark chocolate! But I'm happy to cook with it, so it's ok. They sent: Potatoes, carrots, mushrooms, onions 2 courgette, 2 mini cucumber, spring greens, green pepper 3 bananas, 3 kiwis, 3 oranges, 3 apples (As an aside, they have messed up again. They are supposed to send 1 "piece" and 4 "fillers" off a list - they've sent us 4 "fillers" but no "piece". At first I thought the spring greens was the "piece" and they had sent more than one courgette to make the "fillers" up to 4, but it appears not. They've simply left something out. But I don't think I've got the heart to complain again. I am annoyed, though.) Anyway, in addition to what arrived yesterday, we have some things left from last week: 1/2 courgette, 1 pepper, carrots, and a few potatoes. So now I'm trying to come up with a plan for this week: Wednesday: N/A - going out to the cinema with pub supper beforehand Thursday: N/A - out at Mum's Friday: Leftovers. Except there aren't any leftovers, so it'll be something like tinned soup. Saturday: Vegetarian lasange (black beans, pepper, courgette, onion, carrot, tinned tomatoes; white-cheese sauce), served with cabbage Sunday: Courgette quiche with chips Monday: Carrot and lentil stew, potatoes, cabbage Tuesday: Green pepper and onion risotto I also need to make a cake (chocolate cake, coffee buttercream icing, and walnuts on top) as it's G's birthday on Tuesday. I probably ought to make him a PUDDING as well, because he's rather partial to them. Either a syrup sponge or a baked semolina, depending on whether we have a greater excess of eggs or milk at that stage of the week. And I think I promised him I'd make some oatmeal soda bread at some point over the weekend, too, but that's not very difficult. Menu Plan 13th-19th May 2009This week's vegetable box arrived yesterday:It contained:
Potatoes, carrots, onions, mushrooms Chard, asparagus, broccoli, courgette, 2 small green peppers 3 apples, 4 bananas, 3 oranges, 2 kiwi fruits We also have some potatoes, mushrooms and onions left from last week. It is unfortunate that the box company are getting really bad at delivering the correct extra items - I ordered eggs and plain flour and they have deivered eggs and strong white flour, which is not much use. This in addition to sending me brazil nuts rather than self-raising flour the other week is decidedly annoying. Anyway, disregarding the flour problem, here is the menu plan for the week: Wednesday: Eggs en cocotte with asparagus, served with boiled potatoes and fried mushrooms Thursday: Out Friday: Leftovers Saturday: Pizza topped with courgette, pepper, and mushrooms Sunday breakfast: Fried potatoes, eggs, mushrooms Sunday: Pasta with tomato sauce with courgette, pepper and mushrooms Monday: Leftovers Tuesday: Pasta with chard and cream sauce Menu Plan 6th-12th MayWe were completely out of vegetables by Monday, much to my mother-in-law's astonishment. She looked in the salad drawer and was startled to find it completely empty. We explained that we always try to use the vegetables up before the next box arrives, and she agreed that that was sensible. However, we were very glad to get another delivery yesterday:This week's box contains: Potatoes, onions, mushrooms Spinach, spring cabbage, garlic, sweet potato, parsnip, cucumber 3 bananas, 3 oranges, 2 apples, 2 pears, 2 kiwi fruit Apparently they had a problem with the suppliers of the carrots this week, which is why there weren't any. Not that I mind, as they are my least favourite vegetable. We have the rhubarb they sent last week left, too. So the plan for this week's food is as follows. Wednesday: Red lentil coconut curry with rice, followed by rhubarb crumble Thursday: Cabbage and cheese pasta, followed by rhubarb crumble Friday: Leftovers Saturday: Soup. Either tinned or fresh parsnip soup, depending on time available Sunday: Sausages with boiled potatoes, leftover golden carrot bake (in the freezer), and cabbage/peas Monday: Leftovers Tuesday: Veggie Burrito Bake Two of the recipes this week are new ones that I've not made before (the Red lentil coconut curry, and the veggie burrito bake). Both out of my Simply in Season cookery book that I got for Christmas. I'm looking forward to trying out something new again! Menu Plan 29th April - 5th MayI'm late doing this again this week. Here's the picture of this week's box.I ordered eggs and flour to come, as well as the bread and the box that we get every week. Owing to a technical glitch, they sent eggs and brazil nuts - not so helpful! It should get sorted out next week, thankfully. So, the contents of the box was as follows: Potatoes, carrots, onions, mushrooms Spring cabbage, celeriac, rocket, radishes, lettuce Rhubarb, 3 apples, 3 pears, 2 oranges, 2 bananas We've got my husband's parents coming to stay today (Thursday) until Tuesday, so I'm planning "posher" food than I would normally and will need to supplement the box to accomodate two more people. I don't think it's fair to make them eat strange lentil/rice/bean dishes too much. So, the menu for the week is: Wednesday: Pasta with tomato sauce (leftover) and salad Thursday: Plaice, boiled potatoes, steamed cabbage, and parsley sauce Friday: Celeriac soup Saturday: Barbecue. Chicken and vegetable kebabs, burgers, and a couscous salad Sunday breakfast: Sausages and mushrooms Sunday dinner: Beef wellington, potatoes, cabbage, peas and carrots Monday breakfast: Apple oatmeal pancakes Monday dinner: Probably eating out - not sure yet Tuesday (just the two of us again): Gillygate bean casserole I'll need to visit the farm shop in town for additional vegetables (chiefly peppers, and the usual supplementary apples), and I plan to go to the butchers in my mother's village (30 minutes walk) on Saturday morning to get the meat. They make the best sausages I've ever found, and I think it would be nice to offer them to my father-in-law. Menu Plan 22nd-28th April 2009It seems weird to post the menu plan on a Thursday, but it's taken me a while to get this posted. Didn't even manage to get the pictures of the camera yesterday.The box that arrived on Tuesday contained: Potatoes, onions, carrots, mushrooms Parsnip, purple sprouting broccoli, avocado, 2 green peppers, 2 courgettes 2 oranges, 2 pears, 4 bananas, 3 kiwis, 1 lemon It seems a little early to have courgettes again - I think they're from Spain, like the peppers, but never mind. The weather's certainly warm enough for summer. So the menu for the week is: Wednesday: Lamb chops with roasted potatoes and parsnips and steamed purple sprouting broccoli Thursday: Visiting Mum Friday: Pasta with tomato based sauce of courgette, pepper, onion, served with mushrooms Saturday: Jacket potatoes with cheesy carrot topping Sunday: Pineapple upside-down-pudding - we're going out for lunch and have been asked to take a dessert Monday: Leftovers Tuesday: Pizza with pepper, courgette, onion and mushroom We also have some lentil sprouts that I've succeeded in growing, so may have some of those with the pasta tomorrow night. I think what I've concluded is thus: Wednesday: Leek and onion risotto Thursday: Out Friday: Leftovers (stew for G, poelle paysanne for me) Saturday: Creamy Jerusalem Artichoke Soup Sunday: Parsnip nutty bake with pak choi and soy sauce (I may add a layer of leeks to the parsnip bake) Monday: Leftovers (parsnip bake, I expect, or else tinned soup) Tuesday: Brocolli-eggs florentine (normally Eggs Florentine involves eggs, spinach and cheese sauce, but I saw a version in a magazine that used brocolli instead of the spinach). I'm also planning to pickle the 2 lemons we now have in the house, as an experiment. I realise I've forgotten to put any chilli powder in it though, so I hope it won't matter too much if that gets added nearer the end than the beginning of cooking. Menu Plan 4th-10th MarchLots of goodies arrived in the box last night.Potatoes, carrots, red onions, mushrooms Green pepper, 3 tomatoes, beetroot, cauliflower, brocolli 4 bananas, 6 small oranges, 5 apples We have a minor glut of potatoes, carrots and red onions going on in my vegetable cupboard, too. So, my plan for the week's menu is as follows (we have guests staying the weekend): Wednesday: Cauliflower cheese and boiled potatoes Thursday: Out Friday: Leftovers Saturday lunch: Beetroot and lentil salad, game pie (or similar- from Farm Shop) Saturday tea: Welsh Cakes Saturday supper: Gillygate bean casserole served with brocolli and carrots Sunday lunch: Lasagne (using beef mince, pepper, carrot, mushrooms and canned tomatoes in the meat sauce) Monday: Leftovers Tuesday: "Lurking vegetable soup" - not sure what will be left by then! Brocolli stalk, carrots, potatoes, maybe some split dried peas I also ordered a "meat pack" to arrive with the box, which was very exciting. Here it is: We received beef mince (1lb), 2 lamb chops, 2 pork chops, 2 beef burgers, 7 sausages. I repackaged the sausages into 3 and 4 as we don't need 7 at one meal, and have put it all in the freezer. That should easily keep us going till we go on holiday at Easter. Menu Plan 25th February-3rd MarchAnother box delivery yesterday:We received: Potatoes, carrots, onions, mushrooms Leek, celeriac, parsnip, 2 green peppers, bagged salad 1 pomegranete, 1 grapefruit, 2 oranges, 3 apples, 3 bananas We still have in the house: Mushrooms, carrots We should be at home rather more this week, and I have a friend visiting for half the weekend. I have a plot to empty the freezer so I can defrost it on Sunday, as it's beginning to get a bit clogged with ice again. The fridge could probably use a clean, too. Wednesday: Parsnip and apple curry soup, baked pancakes in orange sauce (because yesterday was Pancake Day and we have some left) Thursday: Out Friday: Leftovers Saturday: White chilli and rice Sunday: Enchilladas Monday: Potato and leek soup Tuesday: Pizza with pepper, mushroom and red onion I'm also planning to make some carrot cake - I boiled up and mashed lots of them yesterday, so the plan is to make two loaves of cake, one for us, and one to take to the party we're going to on Saturday evening. Wednesday: Red Flannel Hash (beetroot, potatoes, bean-paste, onion); Syrup Spong Pudding Thursday: Out Friday: Leftovers Saturday lunch: Chinese Style Chicken; Black Cap Batter Pudding with Ginger Syrup Sauce Saturday supper: Jacket potatoes with braised red cabbage Sunday breakfast: Apple oatmeal pancakes Sunday lunch: Macaroni with leeks and bacon Monday: Leftovers Tuesday: Potato and squash au gratin Menu Plan 4th-10th FebruaryDespite the fact that the ground was covered in snow and the weather people were threatening, the box people didn't cover our vegetable box over with plastic yesterday, which I was a little annoyed about. Nothing was harmed, but I'd ordered two bags of flour, which comes in paper bags and wouldn't really survive the wet!We've got what I think is rather a good selection of veggies this week. Potatoes, carrots, onions, mushrooms Swede, beetroot, bagged oriental salad, Brussels tops, Brussels sprouts 3 bananas, 3 minneolas, 1 lemon, 6 apples We also have a few things left in the house from before: 1/2 a celeriac, 1/2 a green pepper, a few carrots, and lots of potatoes Wednesday: We're eating out tonight, since I've got to go to a meeting in Bottisham and can't get home beforehand. Thursday: At Mum's (NB - cook Friday's supper this evening while making sandwich lunches) Friday: Pasta with onion, brussels tops and cheese Saturday: Rabbit pie with mashed swede and carrot, brussels sprouts; Sultana and butterscotch pudding Sunday breakfast: Fried potatoes, eggs and mushrooms Sunday lunch: Bean and veg stew (black-eye beans, celeriac, swede, green pepper - wonder if I can use the beetroot vinegar left from the Pickled Beetroot we ate over Christmas) Monday: Leftovers Tuesday: Beetroot and lentil salad with Jacket potatoes Last night I cooked pizza, and I was brave enough to put mushrooms on it and eat a (very small) amount of salad with it. Two things that I don't eat. The mushrooms were fine, as I couldn't tell they were there, but I'm still rather unsure about salad. Still working on that one.... Menu Plan 28th January - 3rd FebruaryI think the people who run our box got the wrong memo about the month this week. They sent us: Potatoes, carrots, onions, mushrooms Celeriac, chicory, bagged salad, tomatoes, green pepper 4 bananas, 4 minneolas, 3 giant apples, 2 kiwi fruits It may not be as cold here as it is for a lot of people at the moment, but it is till definitely winter. I want to make lots of soups and stews, not eat masses of salad! Not to mention that my reasoning behind getting box is largely to do with eating seasonal food - the only seasonal vegetable we've got is celeriac! I think next week I shall request my vegetables precisely, so that I get some I can actually make dinner out of. Anyway, this is what I'm planning to make this week: Wednesday: Lentil and celeriac curry with rice and salad Thursday: Out Friday: Leftover curry Saturday: Cassoulet with sausages (guests coming for this meal) Sunday: Vegetarian shepherds pie Monday: Leftover shepherds pie Tuesday: Pizza with pepper, onion and mushrooms Hopefully that will work out alright.
