Using up some extra eggs!
Tonight I prepared an egg casserole that I will bake in the morning. This is a great way to use up eggs when they are plentiful! I like to make something like this on Sunday morning.... fills us all up till we get home at 1pm after church. This week is a little different, my hubby has ivited some friends to meet at our house for breakfast before they head out for a day of ice fishing! ICE FISHING! I like to eat the fish.... wouldn't want to be the one out on the ice doing the catching! Oh, well, as long as they have a good time!! If you ever need to feed a crowd this is an easy one. You could always halve the recipe....
CROWD SIZE HAM AND EGGS 1bag southren style hash brown potatoes 2 cups shredded cheese 1-2 cups meat (I used ham I had in the freezer, can use sausage) 2 doz eggs 1 1/2 cup milk salt, pepper, onion powder
Pour the potatoes into a large baking dish (I used my deep dish pampered chef baking stone) Sprinkle on the cheese top with meat
Mix together eggs, milk and spices and then pour on top of potatoes.
Cover and keep in fridge over night. In the morning get it out and let it sit on the counter for 30-45 minutes...bringing it closer to room temp. Bake at 350 for 1 hour and 30 minutes ish minutes. Allow to set for 10 minutes before cutting.
Cut and enjoy!! YUM!!
You could divide this into 2 baking dishes and then it would take a lot less time to bake.....
