I wanted to share this recipe with you. It's a wonderful banana bread recipe and is very similar to the one my mother used to make for us growing up. That one was lost and this is the closest I've ever come to it:
Going Bananas
From Audrey’s Kitchen J
▪ 1 ½ c. sugar
▪ 3 eggs
Mix together.
▪ ¾ c. oil – add to sugar/egg mixture (you can substitute apple sauce for the oil if you like)
In a separate bowl combine:
▪ 2 c. flour
▪ 2 tsp. Baking soda
▪ ½ tsp. Salt
▪ 1 tsp cinnamon
Mix these ingredients together with a fork and add to egg mixture. Mix at low speed for 2 minutes.
▪ Add 2 cups mashed bananas
▪ Optional ½ c. raisins or walnuts
This makes 2 loaves or one 9 x 13 pan. Sprinkle small amounts of white sugar & cinnamon on top of each loaf before baking.
Bake at 350 degrees F. for 50 – 60 mins. Mmmmmm!
