Gingerbread

After school Abbey made one of my favourites - Ginger Bread.
2 Cups Flour
1 teaspoon baking powder
1 teaspoon baking soda
3 teaspoons ginger
pinch salt.
3/4 cup sugar
1 cup warm milk
2 eggs
1 cup golden syrup
Mix well add 225 grams melted butter
Beat until very well mixed.
This is a very sloppy, wet mixture.
Bake in a square cake tin at 180 deg C for a bout 45 mins - 1 hour. Test that it is cooked.
Butter & enjoy - oh men folk like it hot with custard.

Banana Sour Cream Cake

A good way to use up bruised bananas. - I always have some over ripe ones in freezer - just throw them in whole - skin will go black - but when you have enough eg - this cake uses three just peel the frozen ones & use. Or if like me this week I brought some cheap bruised ones at the shops.
125g butter
1 teaspoon vanilla essence
1 cup castor sugar
2 eggs
3 mashed bananas
1/3 cup sour cream
2 cups self raising flour
1/4 teaspoon baking soda
Cream butter & sugar add vanilla, add eggs one at a time beat until mixed.
Stir in half banana & half sour cream with half the sifted dry ingredients mis & then add in remaining halves.
Spread into a prepared tin - to prepare all my tins I spray with non stick spray & put in freezer before I begin mixing any cake.
Bake in moderate oven for about 1 1/4 hours
Spread with Chocolate icing.
This is my favourite banana cake - the sour cream just makes it! Plus it is light & fluffy YUM YUM!

Berry Slice.

This can be made with any type of berries - just match the jam used to the berry - eg for this one I used raspberries - Winter here in NZ so I used frozen ones - so I used Raspberry Jam. But paly around with what you have - eg strawberries. blackcurrents, boysenberries......
Base
50g (2oz) butter
25g (1 oz) sugar
2 egg yolks (keep the whites)
150g (50z) flour
1 teaspoon baking powder.
Cream butter & sugar, add egg yolks then flour & baking powder.
Spread mixture onto a shallow greased tin.

Middle
Cover the base well with jam to match your berries
Then sprinkle berries on the top - don't be mean now. Try not to go over the edges.

Topping
Beat the two egg white you had put aside until very firm (you can't over beat egg whites)
ADD 125g (4oz) castor sugar - or fine sugar, slowly add the sugar to the egg whites as you beat.
Fold in 50g (20z) coconut.
Spread mixture on top of Jam & berries.

Bake 30 mins at 180 deg C (350F)
Cut into slices & enjoy - Men folk like this slice very much.

Celery Herbed Muffins

Muffin are a quick weekend lunch meal.
1 1/4 cups self raising flour
1 cup of grated cheese
2 rashes of bacon (or can use ham)
1 small onion diced fine (or use spring onions)
1/2 cup finely chopped celery
2 tablespoons of parsley
1 egg
3/4 cup milk
1 tablespoon of grainy mustard.
I cook bacon & onion on high for 1 minute in microwave.
then combine dry ingredients
make a well in centre & add wet ingredients.
Carefully fold - don;t over mix muffins!!!!
Bake at 200 deg C for 10 mins or until cooked.

Feijoa Muffins

2 cups self Raising Flour
75 grams butter - melted
1 cup feijoas, peeled & chopped
2 eggs
zest of one orange
Juice from one orange
1/2 cup sugar.
Melt butter, mix in with feijoas, add eggs, orange juice & zest. Mix
Add sugar & flour, mix gently & place into muffin tins.
Topping
1 teaspoon cinnamon
1 Tablespoon brown sugar.
Sprinkle cinnamon & sugar on top
Bake at 200 deg C for 15 - 20 minutes.
Brilliant way to use up small feijoas that have fallen from the tree -

Lemon Muffins

Abbey made Brent's favourite muffins yesterday - I'll pop photo on & type up recipe tomorrow morning - it's time for me to start my day - have a busy week lined up and I feel like it is my birthday week - I am expecting soo many parcels this week via the mail - I've been buying on line lots of NICE things - hopefully one of the mail orders is my new camera & then I'll drive you nuts with lots of photos.
Don't those muffins look devine - and thy have all been gobbled up!
2 cups self raising flour
scant 1/2 cup sugar (If you like sweet food - make it up to 3/4 cup but i always put less sugar in most recipes)
75g butter
1 cup milk
1 egg
Zest of 2 lemons
Topping:
1/4 cup lemon juice
1/4 cup sugar.
Place flour & sugar in bowl, melt butter, add the milk, egg, lemon zest & beat well with a whisk. Add to flour & sugar.
Using a folding method combine only until dry ingredients are lightly mixed - don't over mix muffins.
I've just begun using patty cases for my muffins but then you don't have to spray the muffin pans & th clean up is soo much easier -
Bake at 200 deg C for 10 mins.
Mix topping together & pour over hot muffins.
