Muffin are a quick weekend lunch meal.1 1/4 cups self raising flour
1 cup of grated cheese
2 rashes of bacon (or can use ham)
1 small onion diced fine (or use spring onions)
1/2 cup finely chopped celery
2 tablespoons of parsley
1 egg
3/4 cup milk
1 tablespoon of grainy mustard.
I cook bacon & onion on high for 1 minute in microwave.
then combine dry ingredients
make a well in centre & add wet ingredients.
Carefully fold - don;t over mix muffins!!!!
Bake at 200 deg C for 10 mins or until cooked.
