Abbey made Brent's favourite muffins yesterday - I'll pop photo on & type up recipe tomorrow morning - it's time for me to start my day - have a busy week lined up and I feel like it is my birthday week - I am expecting soo many parcels this week via the mail - I've been buying on line lots of NICE things - hopefully one of the mail orders is my new camera & then I'll drive you nuts with lots of photos.
Don't those muffins look devine - and thy have all been gobbled up!
2 cups self raising flour
scant 1/2 cup sugar (If you like sweet food - make it up to 3/4 cup but i always put less sugar in most recipes)
75g butter
1 cup milk
1 egg
Zest of 2 lemons
Topping:
1/4 cup lemon juice
1/4 cup sugar.
Place flour & sugar in bowl, melt butter, add the milk, egg, lemon zest & beat well with a whisk. Add to flour & sugar.
Using a folding method combine only until dry ingredients are lightly mixed - don't over mix muffins.
I've just begun using patty cases for my muffins but then you don't have to spray the muffin pans & th clean up is soo much easier -
Bake at 200 deg C for 10 mins.
Mix topping together & pour over hot muffins.
