I am slowly getting my head around this vegeterian way of eating. My research has said to get protein in the diet need to food combine - eg pulses with grain.Last night we had taco's with kidney bean filling it all got the thumbs up - even James who is not that fussed on having meatless meals. I have always been lucky with Brent , he enjoys trying new meals & it's not very often he advises me a meal is not to his liking.
Taco Bean filling.
1 onion & 3 cloves garlic in olive oil
I added 2 cans of kidney beans (still trying to find best place to buy dried beans)
2 cans of chopped tomatoes
2 teaspoons brown sugar.
I let the above cook away for about 20 minutes
Taco fillings that I chopped up
1 red onion
lettuce (out of our garden)
tomatoes
grated carrot
grated cheese (i always do in seperate bowl for non dairy eaters)
1/2 avocado mashed with a bit of lime juice again for on dairy eaters
1/2 avocado & about 4 tablespoons of sour cream - with a but of lime juice.
Everyone just filled up their own taco shells.
