Now this is a fun to make & I will make it many times - just need to have some left over veges!
1 onion
1 red onion
1 carrot diced - fry in skillet with olive oil until soft.
add what ever. eg left overs I had potatoes, kumera, & beans
add spring onions
1/2 cup grated cheese
6-8 eggs - I lost count as too busy yelling JAAAAAAMES as I found a rotten egg - thank goodness I didn't crack it into the mixture. - James did pick up an egg off the outside coop so this is probably where the rotten egg came from - yucky!!!
Herbs I used thyme, parsley & chives from Abbey's herb garden.
Salt & pepper.
once all mixed through put pan in a hot oven 180oC for about 20 minutes until fritta has puffed up & the centre is firm to touch.
Verdict Brent really liked it - Abbey not at all & said she doesn't recommend it. I had a bit & it was ok if you like eggs.
If you had a family that ALL could eat & Liked eggs - and have own supply of eggs this would be an economical ,meal served with fresh bread & a salad.
