This recipe is actually for ginger gems. But as I don't own any cast iron ginger gems (I now feel I need these) I thought I'd try them in muffin tins. Result delicious - gems would be better tho!1 1/2 cup flour
1 teaspoon baking powder
1 teaspoon ground ginger
1/8 salt (as if I would measure that - a good pinch)
1 egg
6 tablespoons milk
25g (1oz) butter
25g (1oz) brown sugar
2 tablespoons golden syrup
Sift dry ingredients, beat egg & milk & add to dry ingredients.
Melt butter, sugar & golden syrup mix & add to other ingredients.
Put in HOT greased muffin tins in a HOT oven 215oC - or 425oF for 12 minutes.
Very yummy - will hunt down some ginger gem tins this week.
