The last of the ham on the bone needs using up so I made some ham muffins. I was short on milk so added another egg to make it go around. Verdict from samplers said they were nice muffins & want them again.
11/2 cups flour1 t baking powder
1/2 cup cubed ham
sprigs of parsley chopped
sprigs of chives chopped
1 cup cheese.
2 eggs
1/2 cup milk
1 tablespoon of whole seed mustard.
Mix wet ingredients together & place into well of dry ingredients. Don't over mix muffins mixture.
Spoon into greased muffin trays
Bake at 200 deg C for 10 minutes or until cooked.
