I’ve had a banger of a headache, so snuck out in garden, & weeded for a while.
I was thinking how wonderful it is that I am able to pass on to Abbey my cooking skills. Today she made her Christmas Mincemeat & googled on down looking for different recipes that didn’t have suet. She has made up her own recipe and it smells & tastes divine!!!!
125g dates covered with hot water to soften – drain
125 g dried apricots
250g sultanas
250g currants
250 raisins
½ cup brandy (she’s a character)
125g brown sugar
2 small apples peeled, cored & chopped.
½ teaspoon each of nutmeg, cinnamon, & mixed spice.
Next month when she makes her sweet pastry I’ll share that too.
James can eat this recipe too as no eggs, butter nuts, flour… now just to experiment to make a pastry.
All sealed away now in jars to mature….
