Sour Dough Bread Part 2

I'm not the world's best baker, but I really like making bread. I do have a bread machine...somewhere...but I prefer to make it by hand. Well, I prefer to use my KitchenAid mixer! I'm still learning though. My current project is sour dough bread.  Tuesday I made the starter and let it sit for 48 hours, today I made the dough and now it has to rise.   I found the recipe on the Ladies Against Feminism website.  The recipe she uses she got from the The Tightwad Gazette III:

5 ½ cups flour (you can substitute whole wheat flour for 1 or 2 cups)
2 cups starter
1 tablespoon salt
1 cup warm water

Dissolve salt in water in mixing bowl. Stir, then knead into ball. Cover with damp towel and allow to rise OVERNIGHT. In the morning, punch down, and divide into two round loaves. Place loaves on greased baking sheet, slash tops with an X, cover again with damp towel and allow to rise 4 more hours. Place a pan of steaming water in bottom rack of oven, preheat over to 400 degrees and bake loaves for 35 minutes until light brown.

Mine is currently in the "allow to rise overnight" part.  I was rather surprised though after reading that the rising times are very long compared to other yeast breads...especially since mine is rising a lot faster than overnight...it's nearly doubled already.   Maybe the second rise will go alot slower? 

Anyway...I took out two cups of my starter for the bread and I put back in two cups of flour and two cups of water.  I'll put it in the fridge in the morning.
