Breakfast Recipes - Oats & Apples Breakfast Bars
Hubby often leaves the house for work in the morning without breakfast. Partly because he doesn't like eating breakfast in the morning, and partly because I don't have anything quick, easy and healthy for him to eat on the run. (I know...bad wife!) I'm on the hunt for some healthy breakfast recipes that hubby will approve of. I'll be trying them and posting what I think, what our son Boo thinks...and more important what Hubby thinks. Here is the first recipe I found on www.mothering.com I will be making today:
Oats & Apples Breakfast Bars By Cynthia Mosher
These moist, yummy bars are wonderful for quick, no time for breakfast, mornings.
3 cups rolled oats 1 1/2 cups of coconut 1 1/2 cups of raisins or chopped dates 1 cup chocolate chips (optional) 3 medium apples, chopped small 2 - 3 cups milk 1 1/2 cups chopped nuts 2 tsp powdered cinnamon 1/2 tsp powdered ginger
Mix the spices together and set aside. Lightly oil or butter a 13" x 9" baking dish, and layer the ingredients as follows:
Layer 1: 1/2 of the nuts 1/3 of the coconut 1/3 of the oats
Layer 2: 1/2 of the raisins 1/3 of the coconut 1/3 of the oats 1/2 of the chocolate chips, if desired all of the chopped apples
Sprinkle half the spices over these two layers and then pour 1 1/2 cups of milk over the top.
Layer 3: Remaining raisins, oats, coconut, chips.
Top with remaining spices and nuts and pour the remaining 1 1/2 cups of milk over the top. Bake at 350 degrees for 30 minutes. Bars may be made ahead of time and frozen for busy mama mornings.
