Apple Caramel Cake

I haven't tried this one yet, but it sounds really good an it's on my "must try" list of recipes.


Apple Caramel Cake

2 cups unbleached flour
1-3/4 cups brown sugar, packed
4 tsp. cinnamon
1 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
3/4 cup butter, softened
2 tsp. pure vanilla extract
6 whole egg whites, slightly beaten
2 cups apples, peeled and sliced

Topping:
1-1/2 cups powdered sugar, sifted
1/4 cup butter, melted
1/4 cup brown sugar, packed
1 tsp. pure vanilla extract
4 tsp. milk


1.  Preheat oven to 350.
2.  Prepare a 12-cup fluted pan with cooking spray & flour; set aside.
3.  To prepare batter, combine flour, 1-3/4 c brown sugar, cinnamon, baking powder, and baking soda in a mixing bowl. In another mixing bowl, combine 3/4 c margine, w t vanilla extract, egg whites & apples.
4.  Mix dry ingredients with wet ingredients just until moistened.
5.  Pour batter into prepared pan.
6.  Bake for 45 minutes.
7.  Cool upright for 30 minutes; invert onto serving plate.
8.  Meanwhile, to prepare topping, combine powdered sugar, remaining margarine, brown sugar, remaining vanilla extract and milk. Immediately spoon over cooled cake.
Serves 12
