Apple Muffins

Apple Muffins

¼ cup (1/2 stick) butter, room temperature
¼ cup + 1/3 cup brown sugar (divided)
½ cup granulated sugar
1 egg
1 cup buttermilk
1 large yellow Delicious apple or other type, peeled and cut into ½" chunks.
1 ¾ cup flour
1 ½ teaspoon cinnamon
1 teaspoon baking soda
¼ teaspoon salt

1. Preheat oven to 400 degrees.
2. Grease 12- hole, full-size muffin tin, including area between openings.
3. In a bowl, cream butter, the ¼ cup brown sugar, and granulated sugar until fluffy.
4. Mix in egg.
5. Quickly fold in buttermilk. Do not overmix.
6. In another bowl, mix flour, cinnamon, baking soda, and salt.

7. Add gradually to sugar-egg mixture, making sure there are no lumps but mixing no more than necessary.
8. Fold in apple chunks.
9. Fill each muffin cup nearly to top.
10. Sprinkle 1/3 cup brown sugar on top of batter.
11. Bake at 400 degrees for 15 minutes.
12. Remove from pan and serve immediately.

Makes 12 muffins. Delicious warm.
