Mozzarella And Tomato Salad
We have an abundance of tomatoes coming from our garden, and I also have lots of fresh basil! Here is a recipe that hubby really likes...only he likes his cheese shredded.

Mozzarella And Tomato Salad Recipe yield: 4 servings.

4 large tomatoes
4 tablespoons olive oil
ground black pepper to taste |
10 ounces mozzarella cheese,
thickly sliced
8 leaves fresh basil, torn into
strips | Chop tomatoes in half, then slice finely; arrange on four plates. Trickle a tablespoon of olive oil over each serving, and sprinkle with black pepper. Lay slices of cheese over tomatoes, and strips of basil over cheese. Cover with plastic wrap, and refrigerate for 30 minutes before serving.

Mmmmm! I do love this type of summer salad. I usually add a dense french (or other artisan style) bread, cut into cubes. Use the fresh mozzeralla has a different texture). And extra olive oil (the bread will soak it up) w/ a splash of balsamic vinegar. Toss it all together shortly before eating. I think I could eat this every day during the summer!
And have you ever tried avocados with tomatoes? I didn't mean to hijack your post. LOL! I get a little carried away with the subject of food!
