Favorites: Chili Recipe

A blast from the past, this post was originally posted last year on Friday, November 4, 2005.
Whew! It's finally Friday! Actually it just means that we will be absolutely busy tomorrow working on our full bath that we are remodeling. So tonight I'm going to make chili. This recipe usually makes enough that we can eat it two days in a row. I'll usually add rice or elbow macaroni to the left overs. It will be nice not to have to spend a lot of time cooking tomorrow night! :) Enjoy!
Chili
2 lbs. ground beef (or you could use ground turkey)
1 qt. tomato juice
1 can diced tomatoes
2 cans red kidney beans, drained
1 medium onion, diced
1/2 cup celery, diced
1/4 cup green pepper, diced
1/4 cup chili powder (less if you prefer)
1 tsp. cumin (less if you prefer)
1 1/2 tsp. garlic powder
1 tsp. salt
1/2 tsp. each of pepper, oregano and sugar (you can omit the sugar if you like)
1/8 tsp. cayenne pepper
Brown and drain the ground beef. Add ground beef and the rest of the ingredients to a 6-quart pot. Cover and simmer for 1-2 hours, stirring at least every 15 minutes. You could also put this in a crock pot on low for 6-8 hours.
