Canning No-No

My husband and the older children harvested most of the carrots in the garden, in preparation to disc the dirt under. We were surprised to find that we still had a few 5 gallon bucket worth of carrots to harvest. Yesterday the girls washed and cut some carrots and with my help we were going to can 7 quarts, for a start.

I had been waiting quite a while for the steam to start coming out of the vent, but there was nothing, not even the boiling sound of water. No, I didn't forget to turn on the heat

, but I finally figured out that I hadn't added any water to the canner! Silly, absent-minded me.

I tried to add the hottest water from the tap, hoping that nothing would crack or explode, but even so, the noise coming from the water touching the hot canner was awful. My little boy got really excited and concerned, and the rest of the family in the living room were asking questions, but I just reassured them that it was nothing. I wasn't about to admit that I had done such a silly thing! And now that it's on the blog, my dh will read it and find out the truth.

The carrots turned out nicely and for the rest of the carrot canning, you can be sure that I'll double check that water was added to the canner.

You know, I've always been a bit afraid of the pressure canner. I love to read stories that don't end in horrible explosions!

You're not alone! I've done similar "silly" things in regard to canning. Then, looking back, I wonder where my thinking was!

I had found your blog accidentally some time ago. I kept checking back to see if you had "updated". I almost thought you were through, and had "given up hope"... You seem to have similar interests, and I was interested in learning to know you! ...

Canning is a very gratifying job when we see all those jars lined up on the shelf, but when there's a mistake it can be worrisom.

Carrie, I've been on your blog to read your entries and I enjoy reading your writings. I'm still here, just jealously guarding my time, and when I get busy with sewing or working on children training, I take a break from posting.

I have done that before. I was pressure cooking a chicken, I kept watching for the pressure to build and then realized I had forgotten to add water.

The skin was scorched a little but it all turned out to be just fine.

Do you leave the carrots in the garden all winter?
