Homemade Snacks?

Looking for recipes or ideas for homemade snack foods...  What types of snacks do you make?  I make most of our meals from scratch, but we don't have many snack items.  So our goal is to try making some instead of buying them. 

I tried to make some tortilla chips from homemade corn tortillas - I think the tortillas needed to be very, very thin for the chips to come out good.  Does anyone have any tips they would like to share?  I also want to try some potato chips.  Hmmm what else would be good to try...  Soft pretzles, granola bars.  Another thing I've thought about is some type of sandwich that I can make and freeze and just pop in the oven when we want to eat it.  I know people make them with bread dough around some type of filling.  Or how about burritos - has anyone made these from scratch and then froze them?  How would you reheat them - without a microwave?

I have made tortilla chips from homemade corn tortillas and they came out pretty good. One thing I did, was after they were fried and drained - I put them in the oven for a few minutes. It realy crisped them up.

I have also made cheese puffs (they are good but NOTHING like the cheetos), and homemade soft pretzels. With Kosher salt and mustard, they are the best.

Tortilla Chips

I have also made tortilla chips. I just buy the corn tortillas (or you could make them) and spray a sheet pan with my misto containing safflower oil. Then I cut up the tortillas into eighths and lay them out on the sheet pan. Then spray the tops of them with more spray, salt and pop them in the oven for 5 or so minutes at 400. Watch them as they burn fast. They definitely get crispy in the oven, slightly different than store bought ones. I find that the more oil you spray them with the better they are :). HTH.

Burritos

We make burritos at our house - which we usually take as lunches during the week. It's usually a 3-step process before the burritos are actually made. My hubby will grill some chicken (quite a bit so that we can use it for several meals). Usually the chicken is done way before the beans, so we just refrigerate it until it's time to make the burritos. Then, I make up a pot of black beans, which cooks most of the day. When they're almost done, I cook a pot of rice (saute garlic first in a little bit of olive oil before adding the rice, salt and chicken stock). Third, I'll make a batch of salsa (3-4 large tomatoes, 2 jalapenos, 1 serrano pepper, 2-3 cloves of garlic, a little cilantro, about half an onion - all chopped or finely diced and added together with some freshly squeezed lime juice on top. Don't forget a pinch of salt). When all this is ready, I'll put a little bit of everything (except the salsa) in a flour tortilla and roll it up. Then, I'll wrap each burrito in foil and put them all in a ziploc bag in the freezer. These are more like Chipotle burritos. The salsa I'll freeze in little individual containers so that we can take out and add to the burritos as eat them. Here in TX we love our salsa!!! I hope this helps!!
