Rod was Right!

Rod and I bought some canned pumpkin at Costco a week or so ago.  I wanted to get 24 cans, but he said 12 would be good.  They were $1.97 for 3 big cans. 

Well....   we were at Costco this weekend and I happened by the pumpkin again.  But this time it was only $.97 for 3 big cans!  Wow!!  So I bought 12  :o)

What kinds of things do you make with pumpkin puree? - besides pumpkin pie, of course!

oh my goodness. we LOVE pumpkin. Pumpkin chili, pumpkin waffles, pumpkin soup (oh that is a winner!), pumpkin muffins. It is late, and I need to get the kids to bed, but I will post some of my pumpkin recipes tomorrow. I wish we could find some pumpkin for that price. my 70 bottles of home-canned pumpkin notwithstanding!

okay - they are all posted - chili, soup, waffles, and two muffins. If you try only two, I would recommend the waffles and the soup. Seriously good stuff. And if you like the soup, you will be kicking yourself for not buying ALL of the pumpkin at Costco!
