The other day I made batches of some bulk mixes but they turned out not to be too bulky if you don't mind my putting it that way. I had recipes for both pancake mix and baking mix.

Pancake mix was by Alton Brown of the food channel. He had it on one of his shows. His shows are great in that he explains the whys of doing things the right way. He will explain why something rises from yeast or baking powder so you really know what is happening in that bread or muffin recipe. Here is the PANCAKE RECIPE link.  I added freshly ground wheat flour half and half to the recipe. I may add more next time. We thought this was great.

I love to read Chickens in the Road by Suzanne McMinn. She is showing me the way to go for many things like chickens and goats and grand pyrenees dogs. I used her baking mix recipe and have made blueberry muffins from it so far. They turned out great. I did add half freshly ground wheat flour to the recipe. Check out her site for interesting blogging and recipes. Notice how I labeled her bag of mix. Oh I never said I was an artist.
