• Monday, March 27, 2006 - Walking by faith

     This has got to be the worst in my cooking history, but my husband comes along and encourages me with the Word of God, thus the walking by faith title. I have to walk by faith now becuase walking by sight would just depress me. Here's what's happening:

     As of about a half an hour ago, I have just burned two pots. I was typing out my blog entry and just let the water in the pots burn out (I was steaming some kale for my healthy pregnancy diet and boiling some eggs for the same reason). This is why I HATE cooking. You've got to monitor what you're cooking constantly. You can't just leave it and expect it to turn itself off (you know, that might be a wonderful invention. The first ever timer stove. Just set the time and the heat will shut off! That's exactly what I need...uh oh. I just told everyone!!! STAY BACK ALL YOU IDEA STEALERS!!! This one's mine!...). My confidence is all messed up (good thing I cooked dinner last night) and I'm mourning the loss of two good pots (both of them are filled with carcoal.I only thought to actually get up and check on the pots when I smelled the kale and charcoal and when I heard a loud crack, which turned out to be a few eggs popping their shells due to the intense heat. I only had the eggs on medium high, but that's more than enough when there's no water). I'm also dreading actually having to eat the kale and open those eggs. I've burned the water out of the pot for the kale before (since the top was on the steamer the kale gets that charcoal smell all in it), so I'll just grin and bear that, but I'm really scared to look inside those eggs. Who konws how deformed they'll look. I wonder what fried-boiled yoke looks like...

     As I'm pondering these musings and slowly making my way back to my computer (this has got to be a lesson on not being on here during the day or something), my husband calls and says he has a Word for me. I say I could use it, lay it on me. He says, "Your steps are ordered by the Lord". Now I'm not one to scoff at the written Word of God (logos) or His timely inspired Word (rhema), but given my circumstance I wanted to just busrt out scoffing at what he just said compared to the situation he didn't know was awaiting him at home. I didn't scoff I just put my mind to walking by faith and speaking that verse like my life at that moment was looking perfectly led by God. In hte natural it was looking quite the ungodly mess, but in the Spirit God is still ordering my steps.

     So that's my story that I just had to tell. I hope it blesses whoever reads this post. LET GOD BE PRAISED AND HIS ENEMIES BE SCATTERED!!!! (including doubt)

• Monday, February 20, 2006 - Sloppy Joes, tonight!

     Since I'm pregnant, I'm trying to eat healthy and everything so I came across this receipe for Sloppy Dogs in my crock pot cookbook. I didn't have hot dogs (and aren't supposed to eat them a lot anyway) so I just put in ground beef (iron!). It came out good, but could have been better. I need to get better at seasoning without making the food too salty. I'm glad I tried it though. It's supposed to be a dinner food, but I've been snacking on it (I'm making sure to eat lots of green leafys with it).

     After every dinner I've cooked in the pot I've been able and motivated to clean it out right away, put away the food in containers and put the pot back like it wasn't even used! I like that. You can't even tell I cooked!!! It's only one pot to clean!!!! I LOVE CROCK POT COOKING!!!!!!

• Wednesday, February 1, 2006 - Corned Beef at last!!!

     This is really late, but I did want to let everyone know I found a bonafide corned beef brisket (with the extra seasoning package) and cooked it for 7hrs. (well I started tasting it about 15 min. before the end. It smelled so good!!!! I just had to. Corned Beef is my FAVORITE type of meat) It came out tasting like a corned beef which means what I had before was NOT a corned beef brisket...or maybe it wasn't preseasoned. This corned beef was pre-seasoned. So we're still enjoying it. I'm trying to exhibit self-control and not eat the whole thing    eat.gif

• Wednesday, January 11, 2006 - Mac and Cheese

     I am currently baking the mac and cheese receipe I got form my BH&G (Better Homes & Gardens) cookbook. I love this receipe! Usually my cheese isn't at all flavorful. When I use this receipe it is super flavorful! I add onions and pepper which I think do the trick as well as two types of cheese (American and extra sharp Cheddar). Now, this is something I know will turn out right. My youngest just recently started eating mac and cheese again. I'm so happy! I like it when my family eats what I cook them and enjoys what I cook. This should hold us until my next crockpot experiment. Stay tuned...

• Wednesday, January 11, 2006 - Not as I expected...

     When last I wrote, I was enjoying the wonderful smells of a supposed wonderful dinner cooking in my crockpot. After it was all over and I tasted the meat I was so dissapointed because it tasted like any old pot roast. I thought I had put a corned beef brisket in there so I was very confused as to how it could change on me and end up tasting like a pot roast. My husband said it's because I cooked it in a pot. I think maybe the wrong label was put on it. So sad. I ahd half a mind to call the store and complain about false advertising, but I just eat my pot roast tastin' corned beef brisket and thank God for the bounty. It did come out very tender. I was just expecting a corned beef taste.

• Monday, January 9, 2006 - Third receipe prepared and cooking as I write =)

     I LOVE MY NEW CROCKPOT!!!!!! This third receipe is gunna taste yummy! My husband brought me a 5.93lb. corned beef brisket. So I followed the directions for a 3 lb. brisket and saw that they added an extra sentence if you have a big pot (which I do, 6 quart). They said I can cook 1 (3 lb.) each, so I just cut that big one in half and put the carrots in first then one half, the onions and the other half on top. It's supposed to be 10-12 hours on low, but I did want ti ready for dinner tonight so I put it on high for 3. After 3 I can add the cabbage for another 3 hours. I'm so excited!!! I'll let you know how it comes out!

• Friday, December 30, 2005 - Crockpot debut

     This is the first time I'm usng the crockpot for dinner! I bought it online from amazon.com. It's 6 liters and should be enough for our family of four. DH is not known for eating leftovers for too long so I'll probably freeze some of it for a later date. I'm so excited!!! I lvoe the idea of preparing in the morning, not seeing it all day and then opening the lid to the fully cooked dinner awaiting you. It makes me giddy just thinking about it!!! I think it's the best thing to hit my kitchen (as far as cooking aids go) in a long while.
