Before and during picsFor those of you who have been asking and commenting about my weight loss thanks. It is certainly a battle.So today I thought I would be brave and show you some pics of my face... I am not brave enough to show you full body yet. haha. What words can compete with those expressive looks?xoxo Three of my children were baptized...Last night three of my children were baptized. What a joyous occasion. Joyous for one... but beyond joyous when three were at once. Aww, don't they look precious? ~~My heart is melting!~~Shannon, aka Dad waiting for dry detail so me (Mom) can take pictures... Shannon is NOT a picture taker and I am very much one. :) He didn't mind, look at the pride welled up in him over our kids! hee hee... I love his poses. :)Youngest first as the children agreed... Carlie Jean was SO excited! :) Look how tickled she was... Now it is Eli's turn Waiting... anticipating... YES! :)Cameo is ready. Bubbling over... :) Thank you Jesus...Keep them close to Your side and bring Abram to You, when the time is right. Amen A time... A time to embrace... A time to dance... A time to laugh...There is a time to every purpose under heaven. Ecc. 3:3-5 Character... Thoughtful. One of Cameo's greatest gifts is her thoughtfulness. She is very aware of others needs, especially Shannon or myself. Honest. Eli is just like Shannon in the fact that he is always honest. We are trying to teach him that honesty is always best, but be careful of saying everything that comes to your mind. :) Compassionate. Carlie Jean is extremely compassionate. She is the first to give out a dose of TLC when someone is sick or hurt. Determined. Abram's determination is strong. If there is something he wants, he will work until it is done. This sometimes gets him in hot water as a 3 year old little boy... but one day as a man this will be a great character trait. Forever...Family is forever. There may be rough days, days where you want to crawl in a hole, days when nothing seems to go right. But then there are days when everyone is pleasant, everyone tries to exhibit what they know and life is peachy. The good comes with the bad... and every moment is a teachable moment. Lord, help me to teach with love. At every opportunity. Because life is precious, and is fleeting... Savor these days. Meet our babies This is Garnet... isn't she pretty? That's me and Ruby... they are still very skiddish. This is Bill the Bull, (Shannon named him)... he is very stand-offish. I hope to warm them up to me and have them eating out of the palm of my hand very soon.
Chas's LOSER Mexican LasagnaLast night for our 8 week LOSER meeting, I decided to treat our ladies and make up something yum-o and healthy. It went over beautifully and was wonderfully low in points. LOVE IT!Here's the recipe Chas's LOSER Mexican Lasagna 1 package ground turkey Large onion chopped Mushrooms chopped 1 can rotel or diced tomatoes with chilis 1 can kidney beans 1 can pinto beans (you can ALWAYS use fresh, I just didn't have them) 1 package yellow rice (I made this as directed without any added oil or butter) 4 whole grain burrito size tortillas 2 cups reduced fat Mexican cheese 2T chili powder 2T cumin 1 tsp garlic powder 1 tsp onion powder 1/2 tsp sage Cayenne pepper to your liking Salt Heat a cast iron skillet and add your turkey meat and onions... brown meat and let onions get all good and soft. Once your meat is ready add ALL of your seasonings, mushrooms and rotel, simmer this for a while so that the mushrooms will cook down slightly, you want them to have a little bit of a bite to them still. :) In the meantime cook your yellow rice separately without oil or butter, if you do add it, you need to alter your points. Once your rice is ready and your mushrooms are nice and tender add 2 cups of rice and your kidney and pinto beans into your meat mixture. Again, let this simmer a bit and all the flavors get to know one another. :) Now grab your 9x13 casserole dish Ladle a small amount of meat mixture to the bottom of your pan (this will keep the tortilla's from sticking). On top of your meat lay two tortillas side by side, you want these to cover your pan as much as possible. Next add another layer of meat, sprinkle about 1/2 cup cheese. 2 more tortillas More meat and the rest of the cheese. Bake at 350 until melty and delicious. Serve with homemade guacamole, salsa, and fat free sour cream Ole'!!!! 20 servings 4.5 Weight Watcher points per serving { Last Page } { Page 2 of 5 } { Next Page } |
