Potato BreadI have been working with this bread recipe for a bit now and its very good...
3 cups all purpose flour 3 cups WW flour 1 cup instant potato flakes 2 Tbls sugar or honey 1 Tbls salt 1 Tbls. yeast 2 Tbls. Lecithin 2 Tbls. gluten flour 1/2 cup powdered milk 1/4 cup olive oil 2 1/2 cups hot water...
Add 4 cups of the flour and the rest of the dry ingredients to the bowl, stir up, add the oil and then hot water and mix with your dough hooks, mix well and start adding flour as needed until you have a slightly sticky dough, I usually only get about 5 cups of flour in.. Let raise until double, punch down and form into pans.. bake at 350 about 35 minutes until bread is nicely brown and sounds hollow when you thump it i.. makes two loaves..
If you dont have Gluten flour and or lecithin leave it out.. still makes a good bread... Onion, Garlic, Cheese bread1 1/4 cup warm milk 3 cups bread flour (I used 2 cups white and 1 cup WW) 2 Tbls. potato flakes 1 Tbls. sugar 1 1/2 tsp. salt 2 Tbls. oil or butter 1 Tbls Yeast 1Tbls minced garlic very finely minced 1 tsp. dehydrated garlic 3 Tbls minced Onion very finely minced 1 cup shredded sharp cheddar cheese
Mix 2 cups flour and the rest of the dry ingredients, add warm milk and oil, mix, add four as needed to make a soft dough... then add the garlic and onions and knead well, add the cheese at the very end, lightly knead or hand knead until mixed...Let raise until double, punch down and form loaf or rolls let raise, not quite as long.. remember the oven spring, this will make one loaf of bread or about 24 rolls... cook at 350 until browned and it sounds hollow.. about 35 minutes.
I made this as a loaf yesterday and we had it with bean soup... we enjoyed it so much I made it again today and made rolls out of it to take to my brothers for Easter Dinner... I think originally this was a recipe for a bread machine...
Bread1/2 cup warm water 1 1/2 tbls. yeast 1/4 cup flour 1 Tbls sugar Mix this together and set aside to bubble
1 cup oatmeal 1 cup whole wheat bread flour 2 cups scalded milk 1 Tbls salt 3 Tbls Lecithin 1/3 cup brown sugar 1/3 cup vegtable oil 1/2 cup gluten flour 1/2 cup potatoe flakes 4 cups all purpose flour
I added all wet ingredients together then added dry ingredieants, adding all purpose flour last..depending on the factors of the day you may not use all of the flour... Knead, until smooth and elastic set in a warm draft free place to rise until double, punch down and form into loaves... this will make 3 loaves... or 2 12 inch loaves... cook at 350 about 35 minutes...
this is the recipe I used yesterday, the pictures are a post or two below this... Its good bread although a bit sweet for my taste... I will be cutting out some of the sugar next time...
Morning Glory Muffins1 cup all purpose flour 1 cup whole wheat pastry flour 1cup sugar 1/4 cup brown sugar 2 tsp baking soda 2 tsp cinnamon 1/2 tsp salt 1 1/2 cup finely chopped or grated carrots 1 1/2 cups finely chopped or grated apples 3/4 cup coconut flakes 1/2 cup walnuts chopped 3 eggs, beaten 1/2 cup vegtable oil 1 tsp vanilla Preheat oven to 350 Lightly oil muffin tins or cups Mix dry ingredients in a bowl and wet ingredients in another bowl... stir together until smooth, cook 20 minutes or until tooth pick comes out clean.
I just made this recipe this morning..I am going to play with it some more.. like maybe using apple sauce for some of the oil and honey for some of the sugar... but this is a good recipe as written... you could also add 1/2 cup or so of chopped dates or raisins...
Pumpkin dump cakeI usually make this in the dutch oven but can be done as well in a 9x13 pan at 350 degrees. Its pretty good rewarmed as well...probably not the healthiest thing but ohhh sooo good!
