Morning Glory Muffins

1 cup all purpose flour

1 cup whole wheat pastry flour

1cup sugar

1/4 cup brown sugar

2 tsp baking soda

2 tsp cinnamon

1/2 tsp salt

1 1/2 cup finely chopped or grated  carrots

1 1/2 cups finely chopped or grated apples

3/4 cup coconut flakes

1/2 cup walnuts chopped

3 eggs, beaten

1/2 cup vegtable oil

1 tsp vanilla

Preheat oven to 350 Lightly oil muffin tins or cups

Mix dry ingredients in a bowl and wet ingredients in another bowl... stir together until smooth, cook  20 minutes or until tooth pick comes out clean.

 

 

I just made this recipe this morning..I am going to play with it some more.. like maybe using apple sauce for some of the oil and honey for some of the sugar... but this is a good recipe as written... you could also add  1/2 cup or so of chopped dates or raisins...

Hello!

I have a healthy version of this recipe that I really like. It was in Light & Tasty mag. (In fact I grated the carrots today so I can put it all together tomorrow.) It uses some ground flax seed inplace of some of the oil & o.j. in place of some of the sugar.

I'd be glad to share the recipe with you if you'd like.

I love Morning Glory Muffins. I haven't made them for quite awhile. Thanks for the reminder. I think I'll make a batch for breakfast.

Just wanted to thank you for this muffin recipe. I spent almost an hour today reading through some of your blogs and when I found this recipe, I ran to the kitchen and made it. They turned out beautifully! I'm enjoying a nice warm one right now!
