I decided to see how bread would turn out using soft white wheat and gluten flour.  I used 3/4 cup of gluten flour to 3 1/4 cups  soft white flour.  The recipe I used had potato and potato water in it...anyway I mixed it all up and it rose well, I formed it and the popped right back up there... but I think that maybe I let it rise to long before baking, when I took it out it had little fallen areas, kind of like big dimples on the top.  The texture of the bread is soft, the air bubbles are a bit large, probably from letting it raise to long,  but I think it will work find for sandwiches.  Its a good thing my daughter enjoys the hand grinding, (we are using a back to basics grainmill) all this trial and error..

 

I worked at the local high school last night..always wears me out  lol  I wonder why... I strapped my handy little pedometer on and  at the end of the shift had walked  4.6 miles...just need to do this every day...might manage to lose a few of the lbs. I need to
