Another question about flour and breadmaking

I wanted to try the hard white wheat, just because I think my daughter would have an easier time with it (milder taste and color).. but I have not been able to find it around here.... I have some soft white wheat berries...would it work for bread if I added gluten flour to it, and if yes how much should I add?
