Ok, I cant think of the URL off the top of my head, but the hard wheat (whether red or white) is great for bread because it has more gluten. The soft wheat is better for pastry! I am sure there are other who can give you more and better information.

High protien wheat is best. If you can find wheat @ 15 or 16 protien get it. I use hard red becauset that's what we grow. Wheat Montana has good high protien wheat.
