How my day is shaping up

I turned on the christmas music,   made sure the lid on the salt shaker was  tightly in place, and salted and pepperd one of those .49 a lb chickens, and put it in the oven to roast this morning...When  it finished  cooking , I took all the meat off of it, and placed the carcass along with the cooking juice some salt, pepper and dehydrated  celery in a pan covered it with water am letting it simmer... the deboned chicken I cut into bite sized pieces and put  in the fridge... Later today I will make a roux, add some vegies to the broth and make a nice nourishing chicken pot pie....

I am also trying a recipe for twice baked potato's since I want to make these for our Christmas eve family dinner... Its kind of an odd combination...but should taste good anyway.   Also on the list today is making a pumkin crisp, DH has a potluck to go to tomorrow for work...

Its pretty quiet around here,  DSS went to work with DH today and DD did go to work, although she feels like heck today...just me and the pups hangin out here... I sure enjoy these days.  I did some spinning while the chicken was cooking,  I have baking to do and candy to make for our family get together.. but it just feels to early to make it...so I guess other then a little tidying up around here and making dinner this will be kind of a down day for me...what a gift....

Later after dinner maybe I can grab DH and we can go do some shopping for our gift exchange gifts.....It sure has been nice since we went to doing the gift exchange..with our family... instead of  trying to buy for everyone, and with a 10 dollar limit it makes it more fun then worriesome..  I usually try ot make something.. but dont think that is going to happen this year... Have a wonderful day...

Your chicken dinner pie sounds great. I love chicken pot pie, it is one of my all time favorite. You think I would have learned to make it by now, lol. Have a great day shopping. Your a brave person. lol
