A new beautiful day

It has been so nice around here the last couple of days.. the sun shining, birds singing,  many birds singing...yesterday I saw a covey of quail feeding in the back yard... and I pheasant down in the lower part of the field.. I havent seen much of the deer lately.. probably laying low with new  babies... we had one doe that seemed to use the back part of our pasture as a babysitting area... the babies had fence around two sides of them.. and a nice little grover of oak trees to lay under... I would see the little ones down there moving around..but not the mom much...

Today is cloudy with the sun peaking thru in spots... the snow level is lowering and mt ashland is suposed to get some snow this weekend... t his is the last weekend its open up there.. and quite often by now the rocks are starting to show thru..thankfully we have a good snow pack this year...

I got in the cooking mode yesterday and tried a new banana bread recipe... it was very tasty... I did make a couple of changes... first of all I cut it in half, then I added some more bananas then what it called for. I also used  WW pastry flour instead of white.  I think perhaps I should not have cut the baking powder and baking soda in half as it did not raise much...its very moist and very heavy...and even though it didnt raise much its very very good..  The next order of business was dinner... I settled on pizza.. so again.. I used tweaked the recipe and added WW instead of just white...was very good... even the picky daughter loved the crust...

that was yesterday... today still stands     before me... how shall I spend my time... hmmm well I will clean up the kitchen,  do a load of laundry,  need to defrost the freezer (might do that when DH is at work next week)  I need to go to the grist mill and replenish some of my spices.. I am going to try the bay leaves out (Thanks Carla), to help get rid of the little buggies that like to invade this place.. and I also need some  oregano.. I love getting the spices bulk from them mainly because they are so fresh.. Might check out a new type of tea...

not sure about what to fix for dinner tonight... maybe a bean soup and WW rolls..espcially if its rainy and cold... If its sunny and nice  DH likes to grill dinner..

WW pastry flour

I use this in just about everything. My husband doesn't like WW,so I tried this and he didn't know it was whole wheat. I use it in pancakes, sweet breads, yeast breads, cakes, etc. I belong to a coop and order 50 # at a time. :) Have a blessed Easter.
