
I thought I'd post one of my easiest recipes to compliment
Gena's latest recipe post.
This is great for making up ahead of time and freezing individual portions, or for feeding a large crew.
- Rinse
and soak overnight a 2 lb. bag (if you have a large crockpot,
otherwise use a 1lb. bag) of pinto beans. You may also use black beans
or a combination of the two.
- Put them in the crockpot on low with enough water or broth to cover them plus about two inches more.
- Cook all day.
- Add some taco seasoning (or cummin, cayenne, red pepper, onion and garlic powder.)
- At this point you may light to add roasted green chilis (canned is fine) or not.
- Use a hand blender and puree.
- Serve hot with cheese and chopped raw onion on top of a tortilla or even by itself in a big bowl.
I make this when I have a crowd to feed. It's easy and filling and very yummy.
