I made
some nice mozzarella today. I also tried to make the whey ricotta,
which I think didn't work. I have tried that a few times and it never
has. I think I will just do the whole milk ricotta recipe next time. I
know when to give up!
We had the cheeses for dinner with some good italian bread and butter,
and a beautiful salad. My husband decided we'd have a treat and go to
town to the mexican place we love for fried icecream and coffee
tonight. It's a rare treat! we are saving pennies to adopt as most of
you know, but it's time to splurge a little.
We found a little more info out on "our" boy. Makes him more precious
to us. I am really pining. I want my boy! I mean, I relly feel like
he's our son- separated from us and we need to get him home. I keep
reading his letter, and about the time I get to the part, "I'm really
suffer in Liberia mom", I'm tearing up and getting sick to my stomache.
I'm totally one of those "mother bear" type women. Don't mess with my
child! It's hard to not be able to care for this kid properly. Is
someone being mean to him? Did he get enough to eat today? Does he have
matching shoes, for goodness sake??!
Well, at any rate, it's tough to wait. Please pray for the Lord to
provide the finances for a couple older kids to come to us. They have
the least chances, and we want them!
Tomorrow I'm making my yummy granola. I bought 25 lbs. of organic
oatmeal, so it's time to make a huge bulk amount of granola. I make
alot and then freeze it in gallon ziplocks to keep on hand. Love my big
freezer! I freeze everything.
