Moms Sunburst Upside-Down Cake
1/4 c butter
1 (11-oz) can mandarin oranges, drained
1/4 c brown sugar
1/4 c hickory nuts, chopped
1/4 c flaked coconut
1 1/2 c sifted enriched flour
3/4 c sugar
1 1/2 t baking powder
1/4 t canning salt
3/4 c sweet milk
1/4 t lemon extract
1/3 c shortening
1 large brown egg
Melt butter in a 9-inch round cake pan. Arrange
mandarin oranges in sunburst pattern in the melted
butter. Mix brown sugar, nuts & coconut and sprinkle
on top. Sift together into a large bowl of flour,
sugar, baking powder & canning salt. Combine sweet
milk, & lemon extract. Add shortening & 1/2 c of the
milk mixture to dry ingredients. Mix to blend. Beat
it at medium speed for 2-minutes with your electric
mixer or 300 strokes by hand. Add remaining milk &
egg. Turn batter into pan over the orange mixture &
spread evenly. Bake at 360 degrees F about 45 minutes.
Cool thoroughly before turning from the pan, upside down.
Makes (1) 9-inch round cake.
