
Eggs Sarah Maude
Mom loved to fix this recipe for my Dad who loved breakfast
more than any other meal of the day. Women's Society nicknamed my
Mother Sarah Maude, and many folks never knew what her real name was.
1 (10-ounce) pkg pastry shells, baked.
[Mom made hers as seldom did she have extra money to buy anything
commercial] she trimmed the crust off 8 slices of her homemade bread
& fitted em into her cast iron muffin pan, brushed em with melted
butter then baked at 400 degrees F until they were lightly browned.
Make white sauce of:
2 T churned butter
1 T flour
1/2 t canning salt
1 c sweet milk
Add 1 c sliced mushrooms that you've sauteed in 2 T grape juice.
Beat 8 large brown eggs & add 1/2 c sour cream, 2 T garlic chives,
1/2 t canning salt, & 1/4 t lemon pepper. Scramble in 1/4 c melted
butter, fill the baked shells & cover with the white sauce. Feeds 7
hungry preachers kids, and their Dad. Mom fried my Dad real country
ham and served it to him: her kids got home cured bacon cause we like
bacon bettern ham.
