Almond Brickle Sugar Cookies
2-1/4 cups all-purpose flour
1 cup sugar
1 cup butter, softened (no substitutes)
1 egg
1 tsp. baking soda
1 tsp. vanilla extract
1 (6 oz.) pkg. almond brickle chips (toffee chips)
Heat oven to 350 F. In large mixer bowl combine all ingredients except
brickle bits. Beat at medium speed, scraping bowl often, until well
mixed (2 to 3 minutes). By hand, stir in brickle bits. Shape rounded
teaspoonfuls of dough into 1-inch balls; flatten slightly. Place 2
inches apart on ungreased cookie sheets. Bake for 8 to 11 minutes or
until edges are very lightly browned.
