Hot Mango Pickle
5 red chillies, chopped and seeded
2 green capsicum seeded and chopped
2 red capsicum seeded and chopped
4 large onions peeled and chopped
12 green mangoes, peeled, seeded and chopped
1 cup sultanas
1 cup raisins
1/2 cup chopped garlic
1/2 cup chopped ginger root
1/2 chopped coriander
2 tablespoons black mustard seeds
malt vinegar
Salt and pepper to taste
Combine all the ingredients, except vinegar, in a heavy based saucepan. Add enough vinegar so that the other ingredients are covered in the pan. Bring to the boil then reduce heat and simmer until the mixture is thick and the fruit and vegetable are soft.
Ladle into jars leaving a 1/2” headspace. Process in a boiling water bath for 15 minutes.
NOTES: if you like it even hot then do not de-seed the chilies. |
