| Red Beans and Rice Mix
1 TBSP dried bell pepper flakes
1 TBSP dried minced onion
1/2 tsp. dried minced garlic
2 tsp. seasoned salt
1 bay leaf
1 tsp. sugar
1/4 tsp. cayenne pepper
1/2 tsp. celery seed
1 tsp. ground cumin
1/4 tsp. crushed red pepper
Beans and Rice
2 cups dried red beans
1 cup uncooked long grain white rice (put into a sandwich size
ziplock bag)
In a small bowl. combine the seasoning ingredients. Place in a snack
size ziplock bag. Fill a pint canning jar with the red beans. Add
the seasoning packet and the rice packet and attach the following
recipe:
TO PREPARE:

1 ham bone
2 cups water
1 tsp. salt
1 lb. spicy or regular smoked sausage--sliced
salt and pepper to taste
Remove rice and seasoning packets from jar and set aside. Wash
beans. Place in a dutch oven; cover with enough water to cover the
beans and soak overnight. The following day, add the ham bone and
the seasoning mixture to the beans (Do not drain the beans). If
necessary, add additional water to cover the beans. Cook, partially
covered, over medium-low heat for 3 to 4 hours. Add additional water
if needed.
About 30 minutes before serving, combine the rice, the 2 cups of
water and salt in a saucepan and bring to a boil. Reduce heat to
low. Cover pan and cook 25-30 minutes without lifting lid.
About 20 minutes before serving, add sausage, salt and pepper to
beans.
Serve over rice.
