Diabetic Blueberry Syrup
3 cup blueberries
1 1/2 cup apple juice
2 1/4 tsp clear jel
1/4 cup plus 2 Tbsp Whey Low or other sugar substitute ok for canning
1 1/2 tsp finely shredded lemon peel
3 Tbsp lemon juice
In a blender container or food processor bowl, combine berries and apple juice; blend or process until pureed. Transfer to a saucepan; stir in clear jel. Cook and stir until thickened and bubbly. If not thick enough to your liking you can add a bit more clear jel. Cook and stir for 2 minutes more. Remove from heat. Stir in whey low, lemon peel and lemon juice.
Ladle into prepared jars leaving a 1/4" headspace. Process for 10 minutes in a boiling water bath. Serve over pancakes, waffles, or french toast.
Makes 3 half pints, or 48 one Tablespoon servings
