CHEESEBURGER SOUP
1 # ground beef
1 onion chopped
2 carrots shredded
1 stalk celery diced
1 tsp dried basil
2 Tab dried parsley
4 Tab butter
3 cups chicken stock
3 cups hash browned potatoes
¼ Cup flour
8 oz processed cheese
1 ½ cups milk
¼ Cup sour cream
Brown beef & drain & set aside. In the same saucepan, saute onions, carrots, celery, basil & parsley in 1 Tab butter, until vegetables are tender about 5 minutes.
Add broth, hash browns, & hamburger & bring to a boil. Reduce heat, cover & simmer for 5 to 10 minutes, or until potatoes are tender. In small skillet melt remaining butter. Add flour & cook & stir for 3 to 5 minutes or until bubbly. Add to soup &
cover & stir for 2 minutes. Reduce heat to low. Add cheese, milk & salt & pepper & cook & stir until cheese melts. Remove from heat & add sour cream. Stir well & serve.
