| Carrot Cake Freezer Jam
Ingredients You Will Need:
1-1/2 cups sugar
1 (1.59-oz) pkg Ball® Simple Creations® Freezer Jam Fruit Pectin
1/2 tsp ground cinnamon
1/4 tsp ground cloves
1/4 tsp ground nutmeg
1 (20-oz) can pineapple tidbits in 100% pineapple juice
2 cups shredded carrots (about 3 medium)
2 cups chopped apple (about 1 large)
Step 1, Getting Started:
Read all instructions before starting. Assemble all supplies and measure all ingredients.
Step 2, To Prepare Carrot Cake Freezer Jam:
1.) STIR sugar, contents of package, cinnamon, cloves and nutmeg in a bowl until well blended. Set aside.
2.) DRAIN pineapple tidbits, reserving 1/2 cup pineapple juice. Set pineapple aside.
3.) COMBINE reserved pineapple juice, carrots and apple in a medium saucepan. Bring to a boil over medium-high heat, stirring occasionally. Cover. Reduce heat and simmer 5 minutes.
4.) ADD pineapple. Crush fruit mixture with a potato masher. Allow to cool, about 15 minutes.
5.) ADD fruit mixture to pectin mixture. Stir 3 minutes. Ladle jam into clean jars to fill line. Twist on lids. Let stand until thickened, about 30 minutes. Refrigerate up to 3 weeks or freeze up to 1 year. Yield: 5 (8 oz) half pints.
Fun Serving Suggestion: Serve this tasty jam over fresh whole wheat bakery-style bread or bran muffins. You'll think you're eating carrot cake - but with less guilt!
