Herbed Tomato Cheese Bread
3 cups flour
1/2 cup grated Parmesan cheese
1/2 cup crumbled blue cheese
2 tsp baking powder
1 tsp baking soda
1 tsp dried basil, crushed
1 tsp dried thyme, crushed
1 tsp dried rosemary, crushed
1/2 tsp salt
1/2 tsp pepper
1 egg
1 1/2 cups buttermilk
1/4 tsp vegetable oil
3 tbsp tomato paste
Preheat oven to 350 F. Grease a 8 x 4 inch loaf pan. In a large bowl, combine the flour, cheeses, baking powder, baking soda, and seasonings. In another bowl, beat the egg, buttermilk, oil, and tomato paste. Stir into the dry ingredients just until moistened. Transfer to prepared loaf pan. Bake for 50-55 minutes or until a toothpick inserted into the center comes out clean. Cool for 10 minutes before removing from pan and placing on a wire rack to cool completely. Yield: one loaf
