GERMAN PECAN BRITTLES COOKIE
1 c. shortening
1 c. sugar
1 c. firmly packed brown sugar
2 eggs
2 c. all-purpose flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1 c. cornflakes, crushed
1 c. chopped pecans
1 tsp. vanilla
Cream shortening in large bowl, gradually add sugar, beating well.
Add eggs; beat well. Sift together flour, powder, soda and salt.
Add corn flakes and pecans. Stirring to coat well. Add to creamed
mixture, mixing until well blended. Stir in vanilla. Drop by
teaspoons 2 inches apart on greased and floured cookie sheet. Bake
at 325 degrees for 10 minutes. Cool on wire rack. Makes 11 dozen. |
