Dijon Potatoes with Fresh Herbs
3 to 4 medium Colorado red potatoes, unpeeled
3 Tbsp. warm water
3 Tbsp. parsley, finely chopped, or a combination of parsley, chives
and basil
1 Tbsp. olive oil
1 Tbsp. Dijon mustard
1/2 tsp. salt
1/2 tsp. sugar
1/4 tsp. ground black pepper
Scrub potatoes and cut into 3/4- to 1-inch chunks. Bring 2 inches of
salted water to a boil in a medium saucepan over high heat. Add
potatoes; reduce heat and boil gently 10 to 15 minutes or until
tender. Drain potatoes and return them to the saucepan.
Meanwhile, in a small bowl mix water, parsley, oil, mustard, salt,
sugar and pepper with a fork until well blended. Pour over warm
potatoes and toss gently to coat. Serve immediately.
