Green Rice with Lemon and Herbs
1 small onion, finely chopped
2 T. butter
1 T. lemon juice
1 cup long grain rice
1 can chicken broth (10.5 oz)
3/4 cup water
2 T. finely chopped parsley
2 T. finely chopped chives
Salt and pepper to taste
In a pan, sauté onion in butter until onion is transparent.
Stir in the remaining ingredients, cover pan and simmer
rice until liquid is absorbed and rice is tender. Serves 6 |
